Healthy Turkey Quesadillas with Cranberry Apple Salsa #SundaySupper

My favorite way to use leftover turkey in a healthy, low calorie way, Turkey Quesadillas with Cranberry Apple Salsa. It is quick, easy and perfect for a weeknight.

Just seeing this delicious cranberry apple salsa again is causes me to crave this meal all over again. It was so good, a little tart from the cranberry sauce, a little sweet from the apple and a whole lot of freshness from cilantro. It was so tasty my toes curl just thinking about it. For some reason, I do not give you all a lot of easy recipes like this. Healthy Turkey Quesadillas with Cranberry Apple Salsa kind of feels like a “non” recipe. It is so simple that you really do not need exact measurements or a specific instructions to make it. You can probably read the ingredients and come up with your own concoction. However, this is how we eat almost every Friday night.

Every Friday night, I get the dinner blues. I do not want to cook. I do not want to do dishes. I do not want to put clean dishes away. I do not want to have counters to clean. I want someone to wait on me, to bring me a cocktail, to come home after a great meal to a clean kitchen. However, life threw us a curveball when my husband lost his job. Thank goodness we have saved money through the years. Going out every Friday night is out of the picture. It isn’t economical not to mention the fact eating out is loaded with calories and “undoes” all the good I have done all week. So I try to find fun little recipes like this. I try not to measure anything and just “free form” dinner. So you do not usually get those type of recipes even when they are really good.

This time I made a concerted effort to give you an easy and quick recipe. You probably feel the exact same as me at the end of a long week and especially after the hours of cooking for Thanksgiving. So I am trying to fill in the gaps of Food Done Light recipes. Do you like recipes like this? Let me know. Would you prefer more substantial recipes? Healthy Turkey Quesadillas with Cranberry Apple Salsa

Ingredients

  • 1 tsp. oil
  • ½ cup thinly sliced onions
  • ½ cup thinly sliced red pepper
  • 8 oz. turkey breast meat, shredded
  • 2 tsp. reduced sodium taco seasoning
  • ¼ tsp. kosher salt
  • 4 oz. shredded low fat Mexican cheese mix
  • 8 low carb tortillas
  • Cranberry Apple Salsa:
  • ½ cup whole berry cranberry sauce
  • ¼ cup finely diced apple
  • ¼ cup finely diced onion
  • 2 tbsp. finely chopped cilantro
  • 1 tbsp. finely chopped jalapeno
  • Juice ½ lime
  • ¼ tsp. kosher salt

Instructions

  1. In a non-stick skillet, heat oil over medium heat.
  2. Add onions and red peppers. Sauté for 5 minutes, or until tender.
  3. Add turkey, taco seasoning and salt. Sauté for another 5 minutes, or until turkey is hot. Place on a plate.
  4. Wipe out the skillet with a paper towel and return to medium heat.
  5. Place four tortillas on a work surface.
  6. Top with turkey mixture and cheese. Top with remaining tortillas.
  7. Cook tortillas one at a time for 3 to 5 minutes per side.
  8. For salsa, mix all ingredients together.
  9. Cut quesadillas and serve with salsa.
