Healthy Thai Chicken Sausage Rolls

My life is revolving around appetizers at the moment. Prep for our annual Christmas party is in full swing. We have about 60 of our nearest and dearest to our home for a frolicking good time. It is all about appetizers, drinks and good times. I start the prep in October with any appetizer that can be frozen. Just like these Thai Chicken Sausage Rolls. I first made them last year, and they were a hit. So I am bringing them back this year. I use store-bought puff pastry, but make my own quick and easy sausage filling in the food processor with lots of Thai flavors.

My favorite part about this is how easy the rolls are to make. I do not have to cut out small circles or triangles to make individual rolls. I just roll out the dough into a big rectangle. Cut it in half and make one big roll. Then all I have to do is cut them into 12 pieces each. It is so easy. The filling comes together in a food processor so the chopping is limited too. To make them ahead and freeze, I make the rolls and cut them. Do not bake them. Place them on a baking sheet in a single layer and pop them in the freezer. Once hard, you can pack them in plastic freezer bags. When you are ready to cook, preheat your oven and bake them on baking sheets. There is no need to defrost them. If you want to make and bake them, just follow the instructions below. How easy is that?

Healthy Thai Chicken Sausage Rolls

Ingredients

  • 1 lb . ground chicken breast
  • 6 oz . pancetta , chopped
  • 2 garlic clove , crushed
  • 6 green onions , chopped
  • ¼ cup chopped fresh cilantro
  • 1 jalapeno , seeded and chopped
  • 2 tsp . fish sauce
  • 2 eggs
  • 2 tsp . grated fresh ginger
  • 2 sheets frozen puff pastry , thawed in refrigerator

Instructions

  1. Preheat oven to 350•.
  2. Place pancetta, garlic, green onions, cilantro, jalapeno, fish sauce, egg and ginger in food processor until finely chopped.
  3. Put into a bowl and mix in ground chicken.
  4. Roll out puff pastry to a 12 x 16 inch rectangle.
  5. Cut in half lengthwise.
  6. Place half the filling into a pastry bag or plastic bag. Snip off the end to create an inch opening.
  7. Pipe the filling along the long edge of one of the puff pastry sheets.
  8. Brush edges with a little water and fold over pressing together.
  9. Place sealed edge down onto a cutting board.
  10. Repeat steps 6 through 9 with remaining ingredients.
  11. Using a sharp serrated knife, cut sausage rolls into 1-¼ inch pieces, diagonally. (12 per roll) Discard end pieces.
  12. Place on baking sheet and baking for 15 minutes, or until golden brown.
  13. Serve with sweet chili sauce.
