What do you do when you have a bag of potatoes and half a packet of taco seasoning staring you in the face? Make these Healthy Taco Seasoned Roasted Potatoes, of course. While it does sound a little out of left field, but they work quite nicely together. Look how crispy the potatoes got. Tickles my toes to see that crust on the potatoes and remember how fluffy they were on the inside while crispy on the outside. Remembering the flavor has me licking my lips, and thinking I should make them for dinner again tonight.
This is a fun side dish. The potatoes have that Mexican food taste in a subtle but oh so delicious way. They are kind of like Doritos meets roasted potatoes, well not kind of, that is exactly what happened. The taco seasoning was leftover from the copycat Doritos I made, Nacho Cheese Tortilla Chips. I still have a little bit of the taco seasoning left. I wonder what other scrumptious foods I can use it on. Stay tuned and find out.

Healthy Taco Seasoned Roasted Potatoes
Ingredients
- 1 1/2 lbs . Yukon Gold potatoes , cubed
- 1 tbsp . oil
- 1 tbsp . grated Parmesan cheese
- 2 tsp . taco seasoning (low sodium)
- 1/2 tsp . kosher salt
- 1/8 tsp . fresh ground black pepper
Instructions

Preheat oven to 450•.

On a baking sheet, toss all ingredients together.

Spread potatoes out into a single layer.

Bake for 15 minutes.

Flip over and back for another 15 minutes, or until potatoes are fork tender and crispy.
