Healthy Sweet Potato Spoonbread {Low Calorie, Low Fat, Vegetarian}

Sweet Potato Spoonbread is a cross between a souffle and cornbread. You have the best of both worlds in a healthier dish, that is also low calorie, low fat and vegetarian.

I was looking for something different to make with sweet potatoes and came across a recipe for Sweet Potato Spoonbread. It kind of reminded me of corn pudding but with sweet potatoes. After researching it more, I realized spoonbread is actually a cross between a souffle and cornbread. If you haven’t heard of spoonbread before, you are not alone. I hadn’t either. It is called spoonbread, because you serve it with a spoon! It is a very Southern dish that dates back to the 18th century. Now that is a recipe that has stood the test of time.

I cannot imagine trying to make this in the 18th century. I would have to whip my egg whites by hand! No! Plus I would be cooking over a hearth with a fire. I can just see me burning it. Oh, there wouldn’t be a timer either.  I would over-cook a lot of food.  I would also have to cook in a dress with a petticoat and a bonnet. What about a corset? Did women cook in corsets? That could be more than I could handle.

I think I will just think back and give thanks to all of those who have paved the way for me to cook in my bare feet with music playing in the background. Who ever invented the stand mixer? Bless you! It is a girl’s best friend. Oh and thank you for my gas stove and indoor heat. Thank goodness corsets went out a long time ago.

Healthy Sweet Potato Spoonbread {Low Calorie, Low Fat, Vegetarian}

Ingredients

  • 1 lb. sweet potatoes, peeled, cooked and mashed
  • 1 tbsp. grated parmesan cheese
  • 1 1/2 cups 2% reduced fat milk
  • 1 cup water
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp. fresh ground black pepper
  • 1 cup ground cornmeal
  • 2 egg yolks, at room temperature
  • 2 tsp. baking powder
  • 1/4 tsp. dried sage
  • 4 egg whites, at room temperature

Instructions

  1. Preheat oven to 325°.
  2. Spray a 2 quart baking dish with cooking spray. Coat sides with cheese.
  3. In a medium saucepan over medium heat, bring milk, water, salt and pepper to a simmer.
  4. Whisk in cornmeal. Continue to whisk and cook for a few minutes, until the mixture thickens.
  5. Turn off the heat and stir in mashed sweet potatoes, egg yolks, baking powder and sage. Let cool for 10 minutes.
  6. In the bowl of a stand mixer, beat egg whites until stiff peaks form.
  7. Stir in 1/3 of the egg whites into the sweet potato mixture.
  8. Gently fold in the remaining egg whites.
  9. Spoon into dish and bake for about 1 hour, or until puffed and golden.

    I love sweet potato shuffle, sweet potato pie, cobbler, yam patties, etc. I wouldn't want anything to take away the SWEET taste. HAHA!!!

  3. Love the idea of making a yummy sweet potato dish that isn't quite as over the top calorie-wise as some of the Thanksgiving ones. Looks like a warm and cozy side dish for a winter dinner.
