Did I make a healthy bruschetta with strawberries just so I could eat some delicious fresh bread? Um, maybe. I’m not telling. I am not going to tell you how my eyes roll backwards with pleasure at the first bite of fresh bread. Oh no, it is not as if I think fresh bread is a gift from heaven. It isn’t as if I cannot resist eating fresh bread.   Oh man, I am totally busted!

I could write an ode to good fresh bread. Alas, I have found a way to make it even better by topping it with a delicious healthy bruschetta. The secret, well two secrets, to good healthy bruschetta is mixing  sweet and savory flavors AND fresh basil and garlic. This mix of these ingredients is irresistible and gives my piece of bread some healthy benefits and nutrients. I do not have to feel so guilty about eating the bread. When I take a bite, not only do my eyes roll back but healthy Bruschetta with strawberries is so good that an audible “mmm” escapes my lips. Yummy in my tummy.

Healthy Strawberry Bruschetta

Ingredients

  • 3/4 cup Strawberry Salsa
  • 1 12 oz. French bread baguette, cut into 1/2 inch slices (about 24 slices)
  • 6 tbsp. mascarpone cheese
  • 6 tbsp. low fat cottage cheese
  • 1/4 cup thinly sliced fresh basil
  • 1 tbsp. aged balsamic vinegar or balsamic glaze.

Instructions

  1. Mix together mascarpone and cottage cheese.
  2. Spread 1/2 tbsp. of cheese mixture on each slice of bread.
  3. Top with 1 tbsp. strawberry salsa, basil and a drizzle of balsamic vinegar.

I calculated 4 Weight Watcher smart points.

*Get a thin long baguette and you will have more than 24 slices. This recipe is for a total of 12 servings so divide the total amount of slices by 12 and you may end up with more than 2 per serving.

      I wish I could eat fresh bread with every meal, but at least I can enjoy it with a little fruit with this recipe.
