All the Mexican restaurants near me seem to like to really undercook their rice? Have you noticed that where you live? I take a bite and the rice is still crunchy. Hardly appealing. So I decided to make my own. But the title???
I know I made Spanish rice not Mexican rice, but it was the thought of undercooked Mexican rice that lead me to make Spanish Brown Rice. It is just the way my mind works. I am determined to make my family eat brown rice. It has been a struggle. My husband, who is from India, grew up eating white Basmati rice at just about every meal. He loves the stuff and can gobble it down by the cup full. Our little one is happy to follow right in his footsteps enjoying every bite of white rice and thumbing her nose at brown rice. I on the other hand adore brown rice. I love that slightly nutty flavor.
So my mission was to create a brown rice dish they would love. I started mixing half white rice with half brown rice. Then it occurred to me that the vegetables turned the white rice brown anyway. So why not embrace the nutrition and go whole hog. I made a batch with brown rice only, and it was a hit. My little one devoured it and did not notice. My husband did figure out it was brown rice, but he loved it too. That settles it. Brown rice is now a winner in our house. Make it a winner in your house, too.

Healthy Spanish Brown Rice
- 1/2 cup canned diced tomatoes
- 1/2 medium onion roughly chopped
- 1 green pepper roughly chopped
- 1/4 cup fresh chopped cilantro
- 3 garlic cloves
- 1 tbsp sherry vinegar
- 1 1/2 cups brown rice
- 2 - 3 cups vegetable or chicken broth
- 1/2 tsp kosher salt
In a blender, puree first 6 ingredients.
Place a sieve over a 4-cup measuring cup.
Pour tomato mixture into the sieve and press out the liquid.
Pour solids into the rice cooker. Then add rice.
Add to the measuring cup enough broth to reach the amount recommended by your rice cooker*.
Add salt and cook on brown rice setting.
Fluff with a fork and serve.

With my rice cooker, I find I need to use more liquid than the manufacturer says. Sometimes I need to cook brown rice longer.
*To make on the stove, follow steps 1 through 3. Then add enough broth to the measuring cup to measure 3 3/4 cups liquid. Bring liquid to a boil. Stir in rice, pureed tomato mixture and salt.
Cover and reduce heat. Simmer for about 45 minutes, or until rice is cooked.
