Tuesdays are slow cooker nights in the Food Done Light house. My daughter and husband have horse riding lessons and since neither ever likes to leave the horses, they tend to come home very late. They will find any reason to procrastinate. They love to feed all the horses, brush them and put them out to pasture. Meanwhile, I am at home twiddling my thumbs. Come on people, we need to eat dinner so I can do the dishes, get my daughter in the shower and get ready for school tomorrow. Of course, all of those nuisances of the day-to-day grind are lost on them. It is all on my shoulders.
So I’ve added another convenience to help Tuesday nights go more smoothly for me. I line my slow cooker with Reynolds® Slow Cooker Liners. The liners keep my slow cooker clean so I don’t have to wash it. Let me tell you, it is a huge time saver for me when we have an hour to get dinner, a shower and bed time completed. I don’t have to scrub off any baked on mess from dinner, just simply throw the liner away. The liners are totally safe for cooking and are designed to handle hot temperatures. What a relief!
With Slow Cooker Cuban Pork and Beans, you are going to have some leftovers. It makes a big bunch. I’ll be sharing some recipes to see the leftovers soon. You may notice that I used two cuts of pork, the shoulder and the loin. Pork shoulder is typically the cut for Cuban pork, but it is higher in fat and calories. Pork loin is very lean but can get extraordinarily dry in the slow cooker. My solution is to mix them both. I get that unctuous feel and taste of the shoulder but with less fat and calories thanks to the loin. It is the best of both worlds. The black beans add extra protein too. Don’t forget to add a little freshness to top off your slow cooked dinner. Fresh tomatoes, onions and lime perk up this slow cooked dish and make it taste so fresh.
