An easy, quick, healthy and one pan dinner. Turkey, asparagus and peppers marinated with balsamic vinegar and mustard.
I got my trusty sheet pan out for this recipe. My sheet pan is definitely the workhorse in my kitchen. I use it more than any other cooking vessel. Why? Simple, ease. It washes like a dream. I can put the sheet pan in the oven, set the timer and forget about it. I don’t have to babysit a pan and stir continuously. Plus roasting brings out the natural sweetness in vegetables.
It is rare that a recipe becomes a regular occurrence on our weekly menu. I always have new recipes to taste test, but I have found Sheet Pan Turkey Asparagus Bake has become my go to. When I am short on time, I pull Sheet Pan Turkey Asparagus Bake together in a matter of minutes. It only takes 12 minutes to cook. You cannot beat that.
You may be surprised that I am using turkey instead of chicken. I have almost totally replaced chicken with turkey. It is lower in saturated fat which makes it lower in Weight Watcher smart points. Hence, I can eat a little more. Why would I not use meat that I can have a big satisfying portion of for fewer points? It is a no brainer. Make it yourself and let me know how it turns out.
