Summer screams for popsicles. Those icy cold chillers are a favorite of kids and those of us that are kid’s at heart. My daughter and I started a tradition of making new popsicle flavors a few years ago. This is her deal. She researches and picks the flavor combinations we make. This year we made three different varieties including the ones here, strawberry, blueberry and vanilla. She asked that we make stripes like the American flag, red white blue popsicles, so that is exactly what we did. She pureed all the fruit for me and helped me set up to take photographs. What a big helper. She also impatiently asked every five minutes if they were frozen yet.

These healthy red white blue popsicles do take a little time. It isn’t hands on time but freezer time. I individually freeze each layer of red and white. The easiest way to fill the molds without making a complete mess is to use small squeeze bottles. I tried using a piping bag, but it was messy. The squeeze bottles were much more controllable, plus I could keep them in the refrigerator in between each round of strips. It is amazing what you can do with those little squeeze bottles. Red White & Blue Popsicles

Healthy Red White Blue aka Strawberry Blueberry Vanilla Popsicles

Ingredients

  • 1 cup + 2 tbsp. vanilla low-fat yogurt , divided
  • 2 cups halved strawberries
  • 6 oz . blueberries
  • 4 tsp . SPLENDA® granulated
  • 6 (3 oz.) popsicle molds

Instructions

  1. Puree strawberries with 2 tsp. SPLENDA® granulated in a blender.
  2. Pour into a squeeze bottle and refrigerate.
  3. Puree blueberries with 2 tsp. SPLENDA® granulated in a blender.
  4. Pour into a squeeze bottle and refrigerate.
  5. Spoon 6 tbsp. yogurt into another squeeze bottle.
  6. Fill each popsicle mold with yogurt.
  7. Cover and freeze for about 1 hour.
  8. Squeeze about half of the strawberry puree into the six molds.
  9. Cover and freeze for an hour.
  10. Repeat with another layer of yogurt and strawberries.
  11. Divide blueberries between popsicles.
  12. Then remaining yogurt.
  13. Push sticks into the popsicle. Cover and freeze for at least two hours.
