Last week when I wrote about my Tomato Feta Salad, I told you about friends of ours that were moving and our last dinner together as neighbors. Well our dinner also starred this easy and healthy Red Pepper Hummus dip. I have been meaning to make red pepper hummus for a while now. I adore the stuff and am forever buying it. Ready made hummus is quite expensive and has more calories than my homemade. So I finally bit the bullet and made it myself. Why, oh why, had I waited so long? It is super-duper simple. You literally throw the ingredients into the food processor and hit the button to turn it on. That is it. I can make this in less than 5 minutes. You cannot beat that for last-minute party food.
Plus my Red Pepper Hummus is vegetarian, vegan, gluten-free, dairy free, and low calorie. That means it is perfect for almost anyone with allergies or special dietary needs. I love to have recipes like this that can satisfy a large diverse group of appetites. You can serve Red Pepper Hummus with vegetables for gluten-free friends. Feel free to make it a day ahead of time. When I am having a party, I try to make as much as I can the day before. This dip is perfect for a make ahead snack, too. Keep it in the refrigerator for a healthy after school snack. Whip up a batch of Red Pepper Hummus today.
Healthy Red Pepper Hummus
- 1 oz can garbanzo beans rinsed and drained, 15 .
- 1 oz jar roasted red peppers drained, 15 .
- 2 cloves garlic finely minced
- 2 tbsp tahini
- Juice of a lemon
- ¼ tsp kosher salt
Puree all in a blender.
Pour into a bowl.
Cover and refrigerate for an hour.
