Healthy Peas & Carrots Salad was not even on my radar. I had bought the peas and carrots to make something else, a pasta salad. (You will get that recipe in June) I had some leftover and did not want to waste it. If I tried serving my husband peas for dinner, I would have a mutiny on my hands. Luckily as I always seem to remember food I’ve eaten, I remembered a Danish sandwich I had over 30 years ago. Yes, I still remember what I ate over 30 years ago. I loved the little Danish sandwiches. They were open-faced and this one had delicious ham topped with a peas and carrot salad. I adored this little sandwich.  The lightbulb in my head went on and I thought I could make the topping of that sandwich into a salad. That is the story of the Healthy Peas and Carrots Salad.

Oh yes, I did recreate that delicious sandwich after making this salad.  For days I enjoyed a delicious slice of pumpernickel bread layered with Black Forest Ham and lovingly topped with a scoop of Peas and Carrots Salad. Oh my gosh! Just like I remembered. This salad is absolutely, positively good on its own. It makes a perfect accompaniment to barbecued chicken or fish. Plus it is unbelievably quick and easy to make. Bring it to your next cookout and let me know if you like it. Try a little on a sandwich too! I beat you will fall in love.

Healthy Peas & Carrots Salad

Ingredients

  • 12 oz . frozen peas and carrots , defrosted
  • 3 slices turkey bacon , finely crumbled
  • 3/4 cup minced red onion
  • 1/4 cup shredded 2% cheddar cheese
  • 3 tbsp . low-fat olive oil mayonnaise
  • 3 tbsp . 2% fat plain Greek yogurt
  • 1 tbsp . champagne vinegar
  • 1 tsp . sweetener
  • 1/2 tsp . kosher salt

Instructions

  1. Toss first four ingredients into a medium bowl.
  2. In a small bowl, whisk together remaining ingredients.
  3. Stir dressing into pea mixture.
  4. Refrigerate for a few hours

  1. My favorite (and super easy) salad is a strawberry spinach salad. Just chop up some strawberries. Marinate them in some balsamic vinegar and sugar if you have time. Throw them over spinach, and make a quick dressing out of olive oil, balsamic vinegar, sugar (or honey), and salt and pepper. Top with any crumbly cheese (blue cheese, feta, goat, or whatever you like), some chopped nuts, and you have an amazing salad.
  2. This states that it is vegetarian in the image when I clearly see ham of some sort in the picture and the ingredient list includes turkey!
