When you think of a strawberry recipe, do you automatically think of dessert?  I never considered strawberries in savory dishes until 13 years ago.  My husband and I were in Florence, Italy.  We were sitting at a restaurant at the base of a gorgeous castle upon a hill.  Trees provided a beautiful canopy over us. It was a fairy tale setting.  I saw strawberry risotto on the menu and could not quite wrap my mind around it.  I decided to bypass the strawberry risotto and have pasta.  A foursome came and sat near us and all ordered the strawberry risotto.  They were ohhing and awwing over each and every single bite.  My pasta was good but not something I was going crazy for.  I could have kicked myself for not having the strawberry risotto.  It became the dish that got away.

Finally a few years ago I made it for Food Done Light.  You can find the recipe here.  It was amazing, everything I had hoped it would be.  From that point on, strawberries became the perfect ingredient for a savory dish.  I even poached Salmon in a strawberry Thai sauce.  Here is the recipe.  Last Spring break when we visited my grandparents, my Grandmother had picked out a recipe for Chicken with Strawberry BBQ sauce.  It was quite a bit of work but delicious.  She served it with a lemon mint rice.  We all realized we had mixed the rice and chicken together.  It was the perfect combination.  That is how the idea for Healthy One Pot Chicken Strawberry Paella came about.

The only problem with making this recipe is that my daughter will try to devour every single strawberry before it is made.  My solution is to buy an extra pint so she can happily snack on some while I am cooking.  Strawberries are a healthy snack I am always happy for her to enjoy. Florida Strawberries don’t just add sweetness to savory dishes, they add fantastic flavor.  They are also incredibly healthy.  8 gorgeous ruby Florida Strawberries have your full daily requirement of Vitamin C and are under 50 calories with 3 grams of fiber.  I also love that Florida Strawberries are in season during the holidays.  That gorgeous ruby-red color is perfect for making your dishes festive. Healthy One Pot Chicken Strawberry Paella #FlStrawberry

Ingredients

  • 1 tbsp. oil
  • 1 cup chopped onion
  • 1 cup chopped red pepper
  • 4 garlic cloves, minced
  • 2 cups Arborio rice
  • 3 1/2 cups low sodium chicken broth
  • 2 tbsp. balsamic vinegar
  • 1 1/4 tsp. kosher salt, divided
  • 1/4 tsp. black pepper
  • 2 lbs. boneless, skinless chicken breast, cut into 2 inch pieces
  • 2 cups strawberries
  • 1 cup peas
  • 1 tsp. chopped fresh thyme
  • 2 tsp. chopped fresh tarragon
  • 2 tsp. chopped fresh mint
  • 1 tsp. grated lemon zest

Instructions

  1. Preheat oven to 350•.
  2. Heat a large ovenproof skillet over medium-high heat.
  3. Add the onions, red peppers, and 1/2 tsp. salt, cook until onions are translucent.
  4. Add garlic and cook for 1 minute.
  5. Add the rice and cook, stirring often, for 5 minutes.
  6. Stir in the broth, vinegar, remaining salt and pepper.
  7. Cover the pan with foil.
  8. Bake for 20 minutes.
  9. Add chicken, strawberries and peas. Leave uncovered and cook for another 20 to 25 minutes, until rice and chicken are cooked.
  10. Remove from the oven and let rest for 5 minutes.
  11. In a small bowl, stir together herbs and zest.
  12. Sprinkle over paella and serve.

  8. I don't think there is a child out there that can resist strawberries :) I love the use of strawberries here! It is true, when I think of fruit I think dessert dishes, but fruit works so well in savoury!

      The touch of sweetness the strawberries bring really add to this dish. Plus when strawberries are roasted they gain a very robust flavor. Works perfectly in savory dishes.

  14. When I saw this on Pinterest, Christie, I just had to come see more. I love mixing fruits with savory dishes and this is brilliant. Chicken and strawberries are a natural and to make it into a paella dish sounds so darn delicious. All those flavors in one dish must be amazing!
