Delicious and moist ground beef meatballs are stuffed with melted mozzarella cheese. Serve the meatball sliders on little rolls for a party or a healthy dinner.

I like to call these Surprise Meatball Sliders. There is a little surprise waiting for you when you bite into one of these luscious meatballs, ooey gooey melted mozzarella cheese. I had these simmering away in a pot of marinara sauce when my little one came home from school. She asked what smelled good, so I proudly showed her explaining there was a surprise inside. She was quite intrigued and could not wait for dinner. At dinner time, I made up these cute little meatball sliders. They are the perfect size for her and I. I gave her the plate and the first words out of her mouth “Where is the cheese?”.
I told her to take a bite, and she would see. Ha, that went over like a ton of bricks. My normally easy-going, eat anything child wanted to see the cheese on top. She was not into the surprise. When I finally got her to take a bite, she relented a little. “Ok these are good but I want to see cheese.” Sigh! Some days you cannot win. I threw a little cheese on hers. The rest of us loved the meatball sliders just the way they were.
So if you have a cheese obsessed child like mine, add a little cheese on top of the meatball. Everyone else will love the little surprise of melted molten cheese on the inside. Make up a big platter for a party, or serve just a few for dinner and freeze the rest. My daughter and I each had one for dinner and my hubby had two. You can use homemade marinara or store-bought. If you are buying store-bought, check out the sugar added. Get the one with the least sugar. Your jaw is going to drop to the ground when reading some of the sugar on jarred brands. Healthy Meatball Mozzarella Sliders
- 2 slices light wheat bread
- ¼ cup non fat milk
- 1 lb. extra lean ground beef
- 8 oz. chopped mushrooms
- 2 tbsp. grated onion
- 1 tsp. Worcestershire sauce
- 1 tbsp. low sodium soy sauce
- 1 tsp. pizza seasonings
- ½ tsp. kosher salt
- 1 1/2 oz. fresh mozzarella cut into 12 cubes
- 2 cups quick marinara sauce
- 12 slider rolls
Preheat oven to 425°.
Place bread and milk into a large bowl. Let sit for 5 minutes then crush up the bread into tiny pieces.
Place mushrooms in a food processor and pulse until finely chopped.
Put mushrooms into a microwave safe bowl. Cover and microwave on high for 3 minutes. Drain off any liquid. Set aside to cool.
Add the mushrooms and ingredients through salt to the bread. Mix thoroughly with your hands.
Divide meat into 12 small balls. Take a ball and press your thumb into it to make a hole. Place cheese in the center and form meatball around the cheese.
Place on a baking sheet.
Spray meatballs with cooking spray.
Bake for 15-20 minutes, or until thoroughly cooked.
In a large saucepan, heat marinara sauce.
Add meatballs and cook on low heat for about 30 minutes.
Place 1 meatball on each slider roll.
