Marinated Coleslaw with Feta (Healthy, Low Calorie)

I’ve been on a search for the most delicious coleslaw, kind of like Goldilocks. Often coleslaw is too sweet. Yuck! Other times it is “gloopy” (like that technical term?) with too much mayonnaise. I wanted a little tang and a whole lot of flavor, just right. Zoe’s Kitchen coleslaw is just right, and I was determined to make it at home. Well that was unbelievably simple.  Yeah! One key is fresh cabbage.  I love to take short cuts at times and a bag of pre-shredded coleslaw mix is certainly easy. I just do not like the taste plus the cabbage is kind of flat and flimsy. Fresh cabbage rocks! Take the extra five minutes to shred it, then salt it to take out some of the water. You will be rewarded with the most delicious coleslaw with scrumptious crunch.

An easy Greek marinade flavors the slaw with a punch of fresh green onion and salty crumbled feta cheese.  That is all you need to make coleslaw that is “Just Right”. Goldilocks would be thrilled with this version. Plus there is no mayonnaise in this superb rendition. You can easily travel with Marinated Feta Coleslaw. Bring it to a potluck or BBQ. Serve it on top of a pulled pork sandwich.  Yum! My favorite is to wrap it in thinly sliced ham on fresh rye bread with a smear of Thousand Island dressing.  Yum Yum! How do you like your coleslaw?

Marinated Coleslaw with Feta

Feta Marinated Coleslaw

Ingredients

  • 8 cups finely shredded cabbage
  • 1 tsp . kosher salt
  • 4 oz . crumbled Feta
  • 1 cup chopped green onion
  • 2 tbsp . red wine vinegar
  • 1 tbsp . lime juice
  • 1 garlic clove , minced
  • ½ tsp . dried oregano
  • 2 tbsp . extra virgin olive oil
  • ½ tsp . kosher salt
  • 1/8 tsp . fresh ground black pepper

Instructions

  1. Place cabbage in a strainer and toss with salt.
  2. Let sit for 15 minutes. Rinse well and let dry for a few minutes.
  3. Place in a large bowl.
  4. Add feta and green onion.
  5. In a small jar with a lid, shake together remaining ingredients.
  6. Pour over cabbage and toss to combine.
  7. Cover and refrigerate for 1 hour.
  8. Add salt to taste.

  1. I love cole slaw when it is done right and without mayo is the way to go! I never thought about adding feta, what a great flavor booster

    I just found out that Zoë's uses canola oil in there slaw. :( So glad you upgraded the health factor by using EVOO instead! Thanks for the recipe!!

      Hi Bobbi, I am shocked they use canola. I would have presumed since it is Mediterranean themed that they used olive oil. Maybe they should try mine and they would switch :)
