Sloppy Joes are called Messy Joes in our house. Last year when I asked my daughter what she wanted for dinner, she said Messy Joes. I, being the totally objective Mother ever, think that is the cutest name, and they really should be called Messy Joes. You could also call them Ten Napkin Joes or my worst nightmare for laundry stains. I think we should wear bibs. Whatever you call them, these are healthy and full of vegetables. Sloppy Joes make dinner utterly fun. When dinner is fun, kids eat better, which makes you relax and enjoy the family time more, too. It is a win win proposition.
I like to use soy crumbles, as we try to eat vegetarian a few nights a week. With all the delicious vegetables and sauce, you can’t tell. Plus they are incredibly easy. You don’t have to brown them, just throw them in. If you aren’t into soy crumbles, no worries, just brown up some ground turkey or chicken first, and keep going with the recipe. If your family doesn’t like mushrooms, throw them in the food processor, and pulse them until they are the size of your ground meat. Once the mushrooms are cooked, your family will never know. We don’t try to hide veggies from our daughter, but do whatt you need to so yours will eat them. There are no judgements here.
If you are my husband, you will throw a handful of arugula on top of the Sloppy Joe sandwich too. I am totally down with that. I love a little peppery bite to the Sloppy Joes. You can always add a little hot sauce too. You can also change up the ratio of vegetables to suit your family’s taste. My family is not hot for celery. So I use just a little for a little flavor and added nutrition. My Mom loves celery so she would double the celery, and cut back on the mushrooms. This is an easy recipe to adapt to what you like.

Healthy Low fat Vegetarian Sloppy Joes
- 1/2 tsp. oil
- 1 tsp. chicken broth or vegetable broth
- 1 ¼ cups chopped red peppers
- 1 cup chopped celery
- 1 cup chopped onion
- 3 garlic cloves minced
- 1 cup water
- 1 cup organic or simply Heinz ketchup
- 1 tbsp. brown sugar
- 2 tbsp. red wine vinegar
- 1 tsp. smoky paprika
- 2 tsp. low sodium Worcestershire sauce
- 1 tbsp. low sodium soy sauce or tamari
- 1 tsp. Dijon mustard
- ¼ tsp. fennel seed
- Dash hot sauce
- 8 oz. chopped mushrooms
- 12 oz. soy crumbles or 1 lb. ground turkey browned
In a large nonstick skillet over medium-high heat, warm oil and broth. Add red peppers, celery, onion and garlic. Cook until vegetables are tender.
Add water and add the remaining ingredients.
Bring to a boil and reduce to a simmer. Simmer for 25 minutes or until mixture beings to thicken and soy crumbles reach 160°.
Serve on a roll of your choice.
