July 4th, Independence Day, means family and time to fire up the grill. We’ll set off fireworks and have way too much delicious food. As we celebrate our independence this year, we can still enjoy with healthy food. With these recipes, you will not even know that they may be lower in calories or fat or just have the nutrition amped up. Locavore – Grilled Watermelon with Smoked Salt and Jalapeno Rings

Love the juxtaposition of this recipe; cool and refreshing watermelon with the bite of spicy jalapeno rings.  This is going to make your taste buds sing.

strawberry spinach saladPrevention RD – Strawberry Avocado Spinach Salad with Creamy Poppyseed

A cool refreshing salad is perfect for a hot summer day.  Plus filling your plate with vegetables will help you eat less of the more fattening fare.

Patriotic-Quinoa-Salad-ItsYummi-718x531It’s Yummi – Patriotic Quinoa Salad

We always need a red, white and blue dish for Independence Day.  This gorgeous dish is loaded with fresh vibrant berries.

Lightened-Up-Potato-Salad-2The Healthy Maven – Lightened Up Potato Salad

Our July 4th celebration would not be complete without a potato salad.  This is a traditional one lightened up.

Slow-Cooker-Vegetarian-Boston-Baked-Beans-The-Lemon-BowlThe Lemon Bowl – Slow Cooker Vegetarian Boston Baked Beans

When you are trying to feed a crowd, beans are the best way to do it.  They are cheap and full of nutrition.  We always like to make beans the day before the cookout.  They always taste better the next day.

spburgers-4How Sweet it is – Smoky Sweet Potato Burgers with Roasted Garlic Cream and Avocado

This is a delicious, vegetarian option.  My husband would be slathering on the roasted garlic cream.  I can just see it dripping down his arm.

Merlot-Onion-Burger-6-titleCupcakes and Kale Chips – Merlot Onion Burger

I always love onions on my burger.  Even if they weren’t delicious, onions may  help to lower cholesterol which makes them perfect for a meaty burger.

easy-grilled-chicken-thighsLife Tastes Good – Grilled Chicken Thighs

You can forget the bun and burger all together and serve up some deliciously, marinated chicken instead.  Without the bun and burger, you will have more calories for dessert.

light-rhubarb-chai-cream-pie-0297txt-687x1024Healthy Seasonal Recipes – Light Rhubarb Chai Cream Pie

I have a slight obsession with rhubarb.  I love it in a savory preparation or in a sweet one.  Mixing it with the flavors of chai tea is genius.

Circus-Animal-Ice-Cream-Cake-3Food Faith Fitness – Ice Cream Cake with Circus Animal Crust

I opted for sheer cuteness rather than red, white & blue for dessert.  Who can resist an ice cream cake anyway?  This is a cool way to end the celebration.
