An easy Peruvian inspired marinade for chicken breasts turns these delicious, easy and healthy weeknight grilled chicken wrap into something special. Top it off with a bold jalapeno cilantro sauce that you will want to put on everything. It is so good.

Ever since I made Grilled Peruvian Chicken with Aji Sauce last year, my husband has been talking about it. I made it almost a year ago to the date. It is the best chicken recipe I have EVER, yes ever, made. The marinade imparts so much flavor to the chicken but what puts it over the top is the jalapeno, cilantro yogurt sauce. This sauce is so good, I could eat it with a spoon. You will find yourself thinking of putting it on anything. It makes my toes tingle just thinking how good it is. Thanks to finding some amazing Greek flat bread at our local grocery store, I was inspired to make a Grilled Peruvian Chicken Wrap. This is the type of meal you eat with a huge smile on your face the entire time. Every bite makes you elicit a “mmm”.
I particularly like this chicken wrap for a weeknight. I throw the chicken in the marinade the night before. You can even whip up the sauce the night before. Just be sure to hide it. Otherwise, your little vultures will eat it up before dinner time. The next day, you can grill up the chicken. Chicken will cook quickly and you can prep the remaining ingredients while your barbecue is imparting some delicious smokiness to cap off this recipe. If you can’t find good flat bread (or don’t want to use up all those calories) use some pita bread or a tortilla. I love the fluffiness of the flatbread and don’t mind a little splurge on the calories every once in awhile. Grilled Peruvian Chicken Wraps
- 1/3 cup low-sodium soy sauce
- 2 tbsp . fresh lime juice
- 5 garlic cloves , smashed
- 2 tsp . ground cumin
- 1 tsp . sweet smoky paprika
- 1/2 tsp . dried oregano
- 1/2 tsp . fresh ground black pepper
- 1 tbsp . 2% fat plain Greek yogurt
- 1 lb . boneless , skinless chicken breasts, cut in half
- 1 jalapeno , roughly chopped
- 1/2 cup fresh packed cilantro , leaves and stems
- 1 garlic clove , smashed
- 1 tsp . apple cider vinegar
- 2 tsp . fresh lime juice
- 2 tbsp . reduced fat mayonnaise
- 2 tbsp . 2% fat plain Greek yogurt
- Pinch of salt
- 4 flatbread , high fiber
- Lettuce , Tomato, Onion - optional
In a blender, puree the soy sauce through yogurt.
Pound chicken to uniform thickness.
Place the chicken into a large plastic bag and pour marinade over the chicken.
Close up the bag and massage the marinade into the chicken.
Refrigerate for 8 to 24 hours.
Heat your grill to medium-high heat with the coals on one side for indirect grilling. Oil the grates well.
Drain the chicken and pat dry with a paper towel.
Grill chicken about 4 minutes per side, or until done.
Place all ingredients into a blender and pulse until sauce is mostly pureed.
Slice chicken and place on flatbread.
Add lettuce, tomato and onion, if wanted.
