When my Mother-in-Law was visiting for my daughter’s Navjote, she, my Mom and I went out for brunch and mani pedis. It was a decadent day and a much needed stress reliever. We have a local restaurant that I love to go for breakfast. The service is pretty slow, but they use fresh and healthy ingredients. I picked my brunch based on a side dish of a garlicky, kale and mushroom hash just like a kale stir fry. Part of me was a little sad at the thought of bypassing their home fries, but I could not resist a garlic loaded hash. What a fortuitous choice. I loved every single bite of it. I could have happily eaten an entire plate of the kale hash and left off the eggs. It was that scrumptious.

After our delectable brunch, we headed for pedicures and manicures. I warned my Mom and Mom-in-law that they would fall asleep during the pedicure. Both thought I was crazy and blew it off. Ha! I told them go for the works; a warm eye mask, warm neck pillow and the softest blanket ever. The real kicker is that the entire chair actually tilts back. So you are still in a seated position, but you are laying back. It sounds like it would be uncomfortable, but it is amazingly comfortable. There is no pressure on your back or behind.

Near the end I look over and my Mom-in-law’s head is tilted to the side and she is in a deep sleep. Then my Mom’s phone rings and she fumbles for her phone chastising my Dad for calling because she had been asleep too! The words “I told you so” may have slipped through my lips. This is a place I go to a couple of times a year to fully relax and disconnect. I wonder if I gave myself a pedicure as a reward for losing 5 lbs, if I would be able to stop stress eating. Hmmm?!? I have to think about that.

At least I can relive the day by making my own version of Garlic, Kale Stir Fry with Mushrooms. I love the idea of having a kale stir fry as a side dish for dinner. It is naturally gluten-free, vegetarian and very healthy. You cannot beat that.

Healthy Garlic Kale and Mushroom Stir Fry

Ingredients

  • 1 tbsp oil
  • 2 cloves garlic thinly sliced
  • 1/4 cup finely chopped onion
  • 8 oz mushrooms quartered
  • 1/2 tsp kosher salt
  • 1/8 tsp fresh ground black pepper
  • 6 cups chopped baby kale
  • 1 tsp sherry vinegar

Instructions

  1. Add oil and garlic to a non-stick skillet over medium heat.
  2. Stir occasionally, and cook for 3 to 5 minutes. Remove the garlic with a slotted spoon and place on a plate.
  3. Increase the heat to medium-high and add the onion, mushrooms, salt and pepper. Cook stirring occasionally until the mushrooms are slightly browned.
  4. Add the kale and sherry vinegar. Stir fry for about 1 minute, just to slightly wilt the kale.
