This weekend was Ladies Night. We usually try to get together once a month, but we hadn’t managed to get together in March. Man, was I ready for a night out with my friends and just being me. Of course, the pressure is on for what to make. Luckily these lovely ladies do not mind being taste testers for a new recipe. Thank goodness because the recipes are not always good. Luckily this Rolled Healthy Eggplant Lasagna was a home run. This healthy eggplant lasagna is the type of recipe you can make earlier in the day and heat up before serving. That was a great time-saver for me and gave me some time to actually put on some make up and do my hair.
I’ve had an idea for making an eggplant parmesan rolling around in my brain for a few years now. The issue was that I did not want to fry or roast the eggplant. Frying would have added too many calories and roasting doesn’t give eggplant the texture I was after. When I made Steamed Eggplant and Shrimp Stir Fry, I got the idea to steam the eggplant. I had noticed I loved eggplant in Chinese restaurants. It always had great texture. So I steamed the eggplant in this recipe, and it worked fantastically.
So with my eggplant set, I needed the perfect filling. We all know lasagna is really about the cheese. The great part about using eggplant instead of pasta is that I saved lots of calories. Those calories could be put to better use by adding more cheese. Cheese makes everything better after all. I used Galbani ricotta and block mozzarella in this recipe. Galbani has been making cheese for over 130 years using Italian craftmanship. Yum! Galbani cheese reminds me of what I ate in Italy. It should since it is Italy’s #1 cheese brand. Luckily you do not have to go to Italy to find it. I bought mine at Publix.
Healthy Eggplant Lasagna was the perfect casserole to bring to share with my friends. What could be better? Great conversation, a delicious Italian dinner and a few cocktails. The weather was perfect, so we enjoyed the meal outside. What a perfect setting for a delicious dinner.

Rolled Eggplant Lasagna
- 2 medium eggplant , sliced lengthwise into 1/4 inch slices
- 1 3/4 cups Galbani Ricotta cheese
- 1/2 cup grated Parmesan cheese
- 4 oz . chopped prosciutto
- 1 tbsp . chopped parsley
- 1 tsp . Italian spice mix
- 1/2 tsp . kosher salt
- 1/4 tsp . fresh ground black pepper
- 2 1/2 cups marinara sauce
- 4 oz . shredded Galbani Part-Skim Mozzarella cheese
Preheat oven to 375•.
Steam eggplant in two batches for 5 to 10 minutes each.
In a medium bowl, mix together ricotta, Parmesan, prosciutto and parsley.
Spread 1/2 cup marinara sauce on bottom of baking dish.
Lay out eggplant onto a work surface.
Place about a tablespoon of ricotta at the end of each slice of eggplant.
Roll up and place seam side down into the baking dish.
Top with remaining sauce.
Sprinkle with mozzarella cheese.
Bake for 30 minutes or until bubbly.
