When I made Slow Cooker Cuban Pork & Beans, I promised you a recipe to use up all those glorious leftovers.
So here it is … a Cuban Sandwich.
It is simple. I mean really simple. I made a little fresh pickled cucumbers and onions to perk it up, but you could use a store-bought pickle. It’s OK, I’ll let you.
This Cuban sandwich is mighty mighty, making it perfect for lunch or even dinner. You are going to be fully satisfied. Healthy Cuban Pork & Beans Sandwich
- 1/2 cup apple cider vinegar
- 1/2 cup distilled vinegar
- 1 tsp. kosher salt
- 1/2 tsp. mustard seed
- 1/2 tsp. black peppercorns
- 1 garlic clove chopped
- 16 1/4 inch slices cucumbers
- 1/2 cup thinly sliced onion
- 1 10 oz. loaf Cuban bread
- 2 tbsp. mustard
- 1 1/3 cups Slow Cooker Cuban Pork and Beans warmed
- 4 oz. thinly sliced ham
- 4 slices reduced fat Swiss cheese
In a 2-cup glass-measuring cup, stir together first six ingredients.
Microwave on high for 45 seconds.
Stir in cucumber and onions.
Cover and refrigerate for one hour, stirring occasionally.
Heat a cast-iron skillet over medium heat.
Cut Cuban bread into 4 equal segments. Cut each segment in half horizontally.
Spread 1/2 tbsp. mustard over one side of the bread.
Top one half of each sandwich with 1/3-cup Cuban pork and beans, 1 oz. ham and 1 slice of cheese.
Drain the cucumbers and onions and place on top of the cheese.
Place top of bread on each sandwich.
Place into the cast-iron pan and top with a heavy plate or cast-iron press.
Cook on one side for about 3 to 5 minutes.
Flip the sandwiches over and press again. Cook for another 3 to 4 minutes, or until cheese is melted.
