I struggle in the summer to get dinner on the table. Every day is a tug of war between getting work done and spending time with my 9-year-old daughter. My solution is to find very quick and easy recipes that I can get on the table in under 30 minutes, under 20 minutes is even better. Last time I was at Publix, I picked up a packet of Aidells® Chicken & Apple Sausage. They are pre-cooked and made with naturally smoked, all-natural chicken, real fruits and vegetables. In addition, they also happen to be gluten-free and nitrate free. Furthermore they make dinner easy peasy. I also splurged on a bottle of Cupcake® Sauvignon Blanc. Summer heat means cold white wine for the ultimate refreshment. I love this particular wine. It is crisp, fruity and great for any occasion.
Another quick tip to make Healthy Chicken Sausage and Peppers Skewers in a dash is to microwave these cute little peewee potatoes. Potatoes really need to be pre-cooked when making a kabob. Otherwise the rest of the ingredients are going to be burnt and your potatoes still rock hard. With 4 minutes in the microwave cooking time for the potatoes, these chicken sausage and peppers skewers only need 10 minutes on the grill. Talk about quick and easy. If you don’t feel like waiting for the grill to heat up, broil them. Either way, you can get a delicious dinner on the table in under 30 minutes. Thank goodness for quick fix meals like this. They give me more time to hang with my little one and relieve a little of that Mommy guilt.
Healthy Chicken Sausage and Peppers is also an easy clean up meal. That means we can linger at dinner a little longer, enjoying a glass of Cupcake® wine and chatting about our day. With no stress dinners like this, dinner time becomes my favorite part of the day. I feel that deep connection with my family and know we had a great ending to another long summer day. It is a wonderful way to savor these precious summer days while my daughter is still little. I know it won’t be long until she is too busy to eat dinner with her old parents.

Healthy Chicken Sausage & Peppers Skewers
- 2 1/2 cups Peewee potatoes
- 2 green peppers each cut into 16 chunks
- 1/2 onion cut 16 chunks
- 12 grape tomatoes
- 1 tbsp. olive oil
- 1 tsp. oregano
- 1/2 tsp. kosher salt
- 1/4 tsp. fresh ground black pepper
- 4 links Aidells® Chicken & Apple Sausage each cut into 6 slices
- 6 skewers soaked in water if wooden
Place potatoes in a microwave safe bowl, Add a splash of water. Cover and microwave on high for about 4 minutes, until fork tender.
Stir in the next seven ingredients.
Push a tomato all the way onto the skewer.
Next sausage, pepper, onions and potatoes.
Continue with three more sausage, peppers, onions and potatoes.
End with a grape tomato.
String each skewer the same.
Preheat broiler on high.
Cook for about 5 minutes . Flip over and cook for another 5 minutes.
Alternatively heat the grill to medium-high, cook 5 minutes per side.
