Easy weeknight meals continues with this Healthy Buffalo Turkey Rice Bowl. Rice bowl recipes are all the craze right now, but really the best part of a “rice bowl” recipe is that you can use leftovers. Oh yeah! I had leftover Spanish Brown Rice and Homemade Buffalo Turkey Meat in the freezer so I combined them with some healthy vegetables, a little more buffalo sauce (come on, you can’t have too much buffalo sauce) and a sprinkling of blue cheese. I had a new meal in seconds. If you aren’t up for making your own buffalo turkey meat, buy some in the deli section of your grocery market. Put out all the fixings and let your family customize their own bowls. It is really simple.
Leftover quinoa, white rice or even pasta could easily be substituted for the Spanish brown rice. Substitute any leftover meat for buffalo turkey. Add some of your favorite vegetables and sauce, and you have created your own dinner rice bowl. It is a great way to fake out those leftover haters. You basically did no work or cooking, but you created something new. It is like magic.
Buffalo Turkey Rice Bowls are also perfect for lunch. You can take it to work and enjoy a delicious bowl at your desk. I love filling mine with some leafy green veggies. Lettuce is a fabulous way to add bulk to your food without any calories. Having a party? Instead of a taco bar party, have a “rice bowl” party. Line up different types of meat, carbs and vegetables and let people customize their own. You can even supplement with store-bought rotisserie chicken. Mix and match some pretty bowls, too. It really is that easy to have dinner on the table in a jiffy.

Healthy Buffalo Turkey Rice Bowls
- 3 cups Spanish brown rice , hot
- 12 oz . buffalo turkey breast , sliced*
- 1 cup grape tomatoes , quartered
- ¾ cup sliced cucumber
- 2 cup green lettuce mix
- 4 tbsp . buffalo sauce
- 2 oz . blue cheese , crumbled
- ¼ cup chopped cilantro
Divide rice between 4 bowls.
Top each bowl with 3 oz. turkey, ¼ cup tomatoes, 3 tbsp. cucumbers, and ½ cup lettuce.
Drizzle 1 tbsp. buffalo sauce over each bowl.
Sprinkle ½ oz. cheese and 1 tbsp. cilantro on each bowl.
