I am reliving my childhood with this recipe. I can actually remember the first time I ever had Beef & Barley Soup. I had no idea what barley was. We were living in England, and I had gone to a friend’s house for lunch or dinner. Her Mum served us beef and barley soup. I fell in love with the very first spoonful. Even so, barley is something I rarely cook with. I don’t know why. I forget about it. I am determined to put it back onto our dinner rotation. This healthy take on Beef & Barley soup is a step in the right direction. This soup is a meal! It is filled with chunks of tender beef along with lots of vegetables and barley. I even snuck some green beans in it. My husband thinks green beans should be banished from the earth, but I like them.
I also used some leftover roast beef. We have some leftover from Christmas, and I was sick and tired of making cheese steak sandwiches with it. This soup is much more healthy and so satisfying on a cold winter night. If you don’t have leftover steak, you can use some raw sirloin. It is no problem. The recipe is easily adaptable.
