Healthy Beef Barley Soup

A meal in a bowl. Tender chunks of beef simmered with vegetables and barley make a healthy and divine dinner.

I am reliving my childhood with this recipe. I can actually remember the first time I ever had Beef & Barley Soup. I had no idea what barley was. We were living in England, and I had gone to a friend’s house for lunch or dinner. Her Mum served us beef and barley soup. I fell in love with the very first spoonful. Even so, barley is something I rarely cook with. I don’t know why. I forget about it. I am determined to put it back onto our dinner rotation. This healthy take on Beef & Barley soup is a step in the right direction. This soup is a meal! It is filled with chunks of tender beef along with lots of vegetables and barley. I even snuck some green beans in it. My husband thinks green beans should be banished from the earth, but I like them.

I also used some leftover roast beef. We have some leftover from Christmas, and I was sick and tired of making cheese steak sandwiches with it. This soup is much more healthy and so satisfying on a cold winter night. If you don’t have leftover steak, you can use some raw sirloin. It is no problem. The recipe is easily adaptable. Healthy Beef Barley Soup

Ingredients

  • 2 tsp. grape seed oil
  • 1 1/2 cups chopped onion
  • 1 1/2 cups chopped carrot
  • 1 cup chopped celery
  • 1 cup chopped winter squash
  • 3/4 tsp. kosher salt
  • 1/4 tsp. fresh ground black pepper
  • 3 garlic cloves, minced
  • 8 cups low-sodium beef broth
  • 2 sprigs thyme
  • 2 sprigs oregano
  • 1 sprig dill
  • 1 bay leaf
  • 3/4 lb. leftover cooked lean steak* see note to use raw beef
  • 1 1/3 cups quick barley
  • 1 cup chopped green beans

Instructions

  1. Heat oil in a large Dutch oven.
  2. Stir in next six ingredients. Cook, stirring occasionally, until onions are tender.
  3. Add garlic and cook for another minute.
  4. Tie herb sprigs together.
  5. Stir in broth and herbs.
  6. Simmer for 30 minutes.
  7. Add the cooked steak and barley. Cover and simmer for 20 minutes, or until barley is tender.
  8. Add green beans and cook until just hot.
  9. Remove the herbs and serve.

Notes

I calculated 7 Weight Watcher smart points

*If using raw beef, brown it as step #2. Remove.
Add it back to the soup after when you add the broth and herbs to the soup. Carry on with the rest of the recipe.
