Baked Chimichangas are the type of dinner I know is going to be a home run with my daughter. It has salmon in it! The child adores salmon, any kind of salmon from fresh to smoked to canned. She is going to be over the moon that October 8th is National Salmon Day. Did you know there was a National Salmon Day? Chicken of the Sea helped create National Salmon Day in 2015 as a public service to remind us about the significant health and wellness benefits of fish.
I am beyond proud that they asked me to make a recipe in celebration. My husband had a heart attack over five years ago now, and that pushed us to eat even healthier. National Salmon Day honors the health, taste, convenience and diverse benefits of both wild and packaged salmon varieties. The maker of Minute® Ready to Serve Rice partnered with Chicken of the Sea this year to make meal-planning easy, peasy.
My mission, which I gladly accepted, was to make an easy and healthy recipe perfect for a weeknight that used both Chicken of the Sea Barbecue Pink Salmon and Minute® Ready to Serve Multi-Grain Medley. In fact I was quite happy to do so and help spread the word about the benefits of seafood and encourage people to eat more of it. I know what you are thinking, seafood is so expensive. It doesn’t have to be. Chicken of the Sea Pink Salmon is affordable, plus it is shelf stable so you can keep it as a pantry item and not worry about it spoiling.
They offer a variety of salmon products including: Skinless & Boneless Pink Salmon, Smoked Salmon and flavored Salmon Pouches. I love that I don’t need a can opener to open them. Just pull the EZ-open tab. Plus there are so many flavors. Last year, I made Salmon Rangoons with the Lemon Pepper and Sriracha flavors. I love to use a pouch to make a salmon sandwich instead of tuna fish or top my rice bowls with a flavored pouch. There are so many scrumptious ways to add salmon to your meals and meet the new Dietary Guidelines for Americans, swapping seafood for meat for two meals per week. That is simple to do with Chicken of the Sea Salmon.
These Healthy BBQ Salmon Baked Chimichangas, are perfect for a weeknight. Baked Chimichangas comes together quickly and can be on the table in under 30 minutes. Woo hoo! My family and I played with two different options for the sauce. One was simply a jar of salsa verde, my favorite salsa ever, and the other was a jazzed by BBQ enchilada sauce. So I made two baked chimichangas of each flavor and gave everyone half of each. Then I asked them to pick their favorite. I should not have been surprised when their favorite was both sauces together! In my heart of hearts, I knew we were all going to enjoy a little green sauce and a little barbecue enchilada sauce together. It is just the way we roll. So give your family two options and see what they like best.
I was totally intrigued by the Minute® Ready to Serve Rice. As my husband is from India where rice is a daily staple, we go through a lot of it. I just love that they are in single portions containers that can be microwaved. What a time saver! It means he can take a cup with him and heat it up at work. It is done in just 60 seconds. Even more importantly as my husband can eat rice by the cupful, Minute® Ready to Serve Rice and Chicken of the Sea Flavored Pouches are already portion controlled.
The flavors marry well together. You can keep both in your desk at work for a quick lunch rather than heading out for that thousand calorie lunch. I love all the new flavors they have including Brown & Quinoa and Basmati Rice, along with whole grain options. There is, of course, my husband’s ultimate favorite, white rice! Healthy BBQ Salmon Baked Chimichangas
- ½ cup minced onion
- 2 garlic clove , minced
- 4 (2.5 oz.) packages Chicken of the Sea Barbecue Pink Salmon
- 2 Minute Ready to Serve Multi-Grain Medley , cooked and cooled
- ¼ cup Greek yogurt cream cheese , softened
- 1/3 cup chopped fresh cilantro
- ½ cup enchilada sauce
- 3 tbsp . BBQ sauce
- ½ cup salsa verde
- 4 low-carb tortillas
- 1 tsp . oil
Preheat oven to 375•.
Mix onion and garlic in a small microwave safe bowl.
Microwave on high for 2 to 3 minutes, or until translucent. Let cool.
In a small bowl, stir together enchilada sauce and BBQ sauce.
In a medium bowl, mix together salmon, onion mixture, multi-grain medley, cream cheese, cilantro and two tablespoons of the BBQ enchilada sauce.
If tortillas are not pliable, microwave on high for 10 to 15 seconds.
Place tortillas on a work surface and place a quarter of the salmon mixture onto the center of each one.
Fold each side of the tortilla onto the salmon mixture.
Starting at the top of the tortilla, roll down keeping the sides folded over.
Place seam side down onto a baking sheet.
Brush tortillas with oil.
Bake for 15 to 20 minutes, or until golden brown.
Spoon some BBQ enchilada sauce and salsa verde over the chimichangas.
