An easy 10 minute side dish for dinner, Healthy Sweet and Spicy Carrots.
Do you have 10 minutes to have a little fun and get a jump-start on getting dinner on the table? That is all I needed for this fun recipe. I often concentrate on whatever protein we are eating for dinner and stick to my tried and true for side dishes. That is why I have so many more entrée recipes than side dishes. Thanks to Del Monte challenging me to their #10MinuteWow contest, I’ve found a new quick and easy side dish to add to my repertoire. Now I have no excuse for boring vegetable dishes for dinner. What I had to do was choose a recipe from Del Monte’s #10MinuteWow Easter Pinterest Board. Then re-create it adding a special personal twist to make it my own. I chose Sweet & Spicy Carrots. For my special twist I added garlic. You know my husband does not like to eat food without garlic. Then I added walnuts. I absolutely adore the crunch of walnuts with the sweetness of carrots. They are the perfect pairing.

I also really liked this quick technique of cooking vegetables. You can easily make it your own by changing the spices you use. Bloom the spices in a little oil like my recipe says. That will bring those dried spices to life and rev up the flavor. Lemon or lime zest would be a scrumptious addition to this recipe, too. Don’t like walnuts?
