It’s summer! Break out the watermelon. Do you remember munching on a slice of juicy watermelon as a kid? Juice dripping down your chin, spitting the seeds out and the biggest smile on your face. A slice of watermelon was like heaven. Now when I think about summer and watermelon I think of Watermelon margaritas or a grilled watermelon salad. Both in one meal, is heaven. A dash of smoky paprika really offsets the sweetness of the watermelon in this scrumptious salad. The feta provides a little saltiness and a touch of tartness comes from the dijon vinaigrette.
Pair this with some freshly pureed watermelon splashed with tequila and lime and of course a little salt around the rim. That is my idea of summer fun, Grilled Smoky Watermelon Salad and a Watermelon Margarita. My husband’s idea of summer fun is to grill everything and anything he possibly can. So everyone is happy with a grilled watermelon salad. Getting a nice sear on the watermelon gives it a slightly caramelized flavor and sweetness. Accentuated sweetness without sugar, oh such deliciousness. How sweet is that? Sorry, I couldn’t resist the pun.
I should not forget our other favorite ingredient, arugula. We love the spicy kick of this leafy green. Onions provide some crunch and texture. Feta, yum, provides a little saltiness and another favorite ingredient, cheese. Um, we do tend to have a lot of favorite ingredients. All the components of this salad combine for the perfect bite. It’s the perfect adult way to enjoy watermelon in the summer. Don’t forget to have a watermelon margarita with it.

Grilled Smoky Watermelon Salad with Dijon Vinaigrette
- 4 1 1/4 inch wedges seedless Watermelon, rind removed
- 1/4 tsp. Sweet smoked paprika
- ¼ tsp. Salt
- 6 cups Arugula or your favorite type of green lettuce
- 1/3 cup thinly sliced sweet Onion
- ¼ cup reduced fat Feta
- 1 tsp. Dijon mustard
- 2 tbsp. sherry vinegar
- 1 tsp. honey
- 1 tbsp. olive or grape seed oil
- 1 tbsp. water
Heat grill pan or grill on high.
Sprinkle watermelon with paprika and salt.
Cook for 3 minutes per side
In a small bowl, whisk together mustard, sherry vinegar and honey. Whisk in oil and water.
In a medium bowl, toss together arugula or lettuce, onion and feta.
Pour in the dressing and toss.
Place a piece of watermelon on each plate and top with ¼ of the salad mixture.
