Grilling season is among us. I am ever so happy about it. Sure grilled food tastes delicious and is easily made healthy, but truth be told, the real reason I love grilling season is that my husband does the grilling. That is right. I can prep the food then relax while he does the actual grilling. When we have friends over for a BBQ, all the men end up hanging around the grill admiring the hunks of meat, talking about whatever men talk about while grilling. While the ladies can sit enjoying a sip of a cocktail.
Does it happen like that at your house? When it comes to BBQ parties, I like to max out on food that can be grilled. That means not just grilling the meat, but grilling the sides and the veggies too. I am one smart cookie, and know I can have the sides prepped before hand. It is almost like an afternoon off.
For this BBQ, I headed to Walmart to pick up everything we would need. Kingsford Charcoal for the grill. Love that Kingsford has been around for 100 years. That means it is tried and true. The brickets are made of natural ingredients and real wood. In addition, the charcoal is smoking hot and ready to go in 15 minutes; plus it has a long burn time so we can use less and spend money on the food. Thank goodness I can find some deals at Walmart to feed our party guests.
I was going to make a potato salad, but I saw the sweet potatoes while I was at Walmart and thought that would be a nice change. Forget the gloppy potato salad, a nice garlicky, grilled sweet potatoes are the ticket. In addition I picked up some zucchini to throw on the grill too. I almost forget the plates and napkins and had to get out of line to go back for them. Boo hoo. I especially don’t like that. At least I left with everything I needed and a few things I did not.
You can easily put together the Grilled Sweet Potatoes with Garlic Butter in the morning. They can stay in the fridge until it is time to grill them. That will give you more time to work on getting the table set, drinks ready and if you are me running around like your head is cut off cleaning the house! I really don’t like that job. With this in mind, I love to serve the food in containers I can store leftovers in. That means I have less dishes to do at the end.
I pop the Grilled Garlic Butter Sweet Potatoes into a pretty bowl to serve. Then when we are done I use Glad Press’n Seal over the top to store the leftovers. I particularyly love that I know it seals, and I do not have to hunt for some containers with matching lids. Usually I never seem to have matching lids. Plus it seals tighter than foil or plastic wrap so the food stays fresher. Thank goodness it is BPA free. That means I can even pop it into the microwave the next day to warm up the potatoes. Moreover I love leftovers after a party. As I am always too tired to cook the next day.

Grilled Sweet Potatoes with Garlic Butter
- 1/2 tbsp unsalted butter
- 11/2 tbsp grape seed oil
- 6 garlic cloves thinly sliced
- 2 lbs sweet potatoes chopped into 1” pieces
- 3/4 tsp kosher salt
- 1/4 tsp fresh ground black pepper
Preheat grill on medium-high heat.
Place butter, oil and garlic in a large microwave safe bowl, and cook on high for 30 seconds, or until butter melts.
Add potatoes, salt and pepper mixing well.
Spray a large piece of foil with non-stick spray.
Add potatoes to the center and fold up tightly.
Grill for 10 minutes. Turn over and cook for another 10 minutes. If not done, turn over again and cook for another 10 minutes.
