Grilled Potato Rosemary Kebabs

This Father’s Day use rosemary sprigs for skewering potatoes and throw them on the grill. Grilled Rosemary Potato Kebabs will be a favorite.

I’m embracing the grill for Father’s Day.  It’s nice to let my Grillmaster have fun and tend his own fire.  My hubby just loves potatoes so they are a necessity for my Father’s Day Menu.   Actually love is an understatement.  This is a man who loves a potatoes on a sandwich.  He loves them any way I make them.  This way is quick and easy but looks great.

We happen to have a few rosemary plants in our yard.  Woo, they grow like weeds.  It is amazing how little water they need.  When we were visiting Texas, we saw they growing all over the place.  They smell so incredibly good.  I love to walk out of our front door and smell rosemary wafting through the air.  Since we have so much, I love to find different uses for them.  They make fantastic skewers; plus they help to flavor the potatoes.

My husband loves potatoes or bread or rice. He is a carb man through and through. When my grandparents are visiting, he and my grandfather can go through a loaf of bread in a matter of days. They each love the heal and gallantly “let” the other have it on alternate nights. I don’t think my husband’s life would be complete without potatoes, rice or bread.

Grilled Potato Rosemary Kebabs

Ingredients

  • 28 oz baby red potatoes
  • 1 tbsp. olive oil
  • 1 tbsp. fresh chopped rosemary
  • 1 tsp. kosher salt
  • 1/8 tsp. fresh ground pepper
  • 4 to 5 strong rosemary sprigs or skewers

Instructions

  1. Place potatoes in a large bowl with a splash of water. Cover with plastic wrap and punch a few holes in the top.
  2. Microwave on high for 5 minutes. Let cook for a few minutes and carefully remove the plastic wrap. Place potatoes on paper towels to dry completely.
  3. Once potatoes are dry, place in a large bowl and toss with olive oil, rosemary, salt and pepper.
  4. If using rosemary sprigs, pull off most of the leaves. If using wooden skewers, soak them in water for about 15 minutes.
  5. Thread potatoes onto the skewers going through the longest side of the potatoes.
  6. Heat grill on high heat. Be sure to oil your grill well. Once grill is about 350º, pleace potato skewers on the grill. Cook for about 10 minutes, turning frequently.
