We had been on a lucky streak with my husband’s heart condition. He had been doing really well, but looks like we are getting back on the merry-go-round, again. Unfortunately he was having some pain and went in for a stress test. The results were not what we hoped for, although they were not really bad either. Something may be going on, so it looks like another angiogram is in order to see what is going on with the stint.

If you have been a long time reader of Food Done Light, then you know the history. My husband had a heart attack a little over three years ago, at the age of 46. He did not progress well afterwards and after getting to the “right” doctor, he ended up having a mitro valve repair. It was a long recovery with lots of ups and downs, but for the last year there had been very few “downs”. It meant so much to me to read all the supportive comments and hearing about your own situations dealing with medical issues of a loved one.

So, I am trying to keep a positive attitude. While the stress test results showed there was a problem, his doctor still thinks there is a chance everything is fine. I am trying not to soothe myself with a box of cookies, and actually doing fairly well with it.  Since there is some evidence that onions may actually help reduce cholesterol making for a healthier heart, that makes this recipe for grilled onions pretty perfect for today.  Food Done Light is about eating healthy and trying to achieve a healthy lifestyle.

While it started being about my need to lose weight, it really has taken on an added dimension about heart disease.  In a way, we are coming full circle, or is that my tired and stressed brain just drawing an imaginary circle.  I am sending out a big hug to all the caregivers out there, and a fun and easy recipe for grilled onions to enjoy with the ones you love.

Grilled Onions with Breadcrumbs and Parmesan Cheese

  • 1 large Vidalia onion
  • 1 tbsp. oil
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. chopped fresh thyme
  • 1/2 tsp. kosher salt
  • 1/8 tsp. fresh ground black pepper
  • 2 tbsp. panko crumbs
  • 1/2 oz. grated Parmesan cheese
  • 2 tbsp. chopped chives


  1. Heat a grill to medium heat. Cut off a little slice from each end of the onion. Be sure not to fully slice the root end off.
  2. Peel the onion.
  3. Place the onion on a cutting board with the root end on the board.
  4. Cut the onion into eight chunks being sure not to cut all the way through the root end. You want the onion intact.
  5. Place on a piece of foil.
  6. Drizzle oil and Worcestershire sauce on the onion. Sprinkle with thyme, salt and pepper.
  7. Wrap the onion up and grill for about 30 to 40 minutes, or until onion is tender.
  8. Place panko in a small saucepan and spray with a little non-stick cooking spray. Toast over medium heat.
  9. Top onion with panko crumbs, cheese and chives.

      I thought about making a dip for it, but it really didn't need it. The juice from the onion really made a nice little sauce.
