It always seems that a steakhouse is on the top of everyone’s list to go out to eat. Me, not so much. Now I love a good steak, love, love, love. Why do I want to go to a steakhouse and pay big bucks when I can easily make one just as good at home? It is a lot cheaper and easy. Grilling strip steak is simple. There are one a few rules.

  1. Bring your steaks to room temperature before you cook them.
  2. Pat them dry.
  3. Aggressively season with salt and pepper.
  4. Use good charcoal like Kingsford Professional and get your grill screaming hot.
  5. Get a good sear on both sides of the steak.
  6. Do not overcook it.
  7. Let it rest.

It is so important to bring your strip steak to room temperature. That means it will grill more evenly.  Do not skip patting your steak dry. A dry strip steak will give you a better sear. You don’t want a steamed steak, do you? A steak is one place I do not skimp on the salt and pepper. We watch our sodium intake but a good steak needs salt. You also want to use a charcoal grill. It adds flavor and can get your grill hot, hot, hot. Kingsford® Professional can build a hotter fire. Hot fire in your grill is good. The hotter, the better sear on your beautiful steaks. There is nothing worse than an overcooked strip steak. A medium rare steak only needs a few minutes on each side. Use a thermometer, if you are not sure.  Finally let that steak rest. It is going to smell and look so good, you are going to want to cut right into it.  Don’t do it. If you cut the steak too soon, you will see all the juice flow out.  It will make you want to cry. Just be patient and whip up the Marsala Sauce to go with it.

Grilled NY Strip Steak with Crispy Shallots and Mushroom Marsala Sauce

Crispy Shallots:

  • 4 large shallots , halved and thinly sliced
  • 1 tbsp . grapeseed oil
  • 1/2 tsp . kosher salt
  • 1/8 tsp . fresh ground black pepper


  • 4 NY Strip Steaks
  • 2 tsp . kosher salt
  • 1 tsp . fresh ground black pepper

Marsala Sauce:

  • 2 tsp . oil
  • 8 oz . sliced portabello mushrooms
  • 1/4 tsp . kosher salt
  • 1 cup low-sodium chicken broth , divided
  • 2 tsp . cornstarch
  • 1/2 cup Marsala wine
  • 1 tsp . Worcestershire sauce


  1. Preheat oven to 450•.
  2. Mix ingredients for crispy shallots. Pour onto a baking sheet.
  3. Bake for 15 minutes. Stir and bake for another 5 minutes, or until crispy. Set aside.
  4. About 20 minutes before grilling, take steaks out of the refrigerator and let sit. Pat dry.
  5. Using Kingsford Professional charcoal, heat grill as high as it will go. Oil grates well.
  6. Sprinkle both sides of steaks with salt and pepper.
  7. Place steaks on hottest part of grill. Cook for 4 to 5 minutes, until slightly charred and golden brown.
  8. Turn over and cook another 3 to 5 minutes for medium rare. Increase cooking time by a minute or two for more well done steaks.
  9. Place steaks on a cutting board to rest.
  10. Heat non-stick skillet over medium-high heat with oil.
  11. Add mushrooms. Do not stir or move. Let them brown about 5 minutes.
  12. Turn over and brown on the other side. Take out of pan and place on a plate.
  13. In a small bowl, whisk together 2 tbsp. chicken broth with cornstarch.
  14. Add Marsala to the skillet and cook for 1 minute.
  15. Add chicken broth and bring to a boil.
  16. Whisk in cornstarch. Let simmer for a few minutes.
  17. Serve steaks with Marsala sauce and top with crispy shallots.
