Grilled Lemon Garlic Artichokes

Memories! Just seeing these picture of Grilled Lemon Garlic Artichokes again makes me want to eat them right now. They were so delicious. No, that doesn’t even begin to describe how much I enjoyed them. Scrumptious, magnificent, delectable, nope, still doesn’t quite describe how much I loved these. This is the type of food that you want to close your eyes and savor each mouthful.  No one talk to me or interrupt my moment with the artichoke leaf.  This is a private moment between the two of us.  That is how much I enjoyed these grilled artichokes.  I didn’t want to dip the leaves in anything.  There is no need for butter,  mayonnaise or anything else.  They are perfect at least in my mind.

I’ve already expounded on my love affair with artichokes in other recipe posts so I won’t bore you with all the glorious details again.  You get the picture, I love them.  I do think they would be perfect on an Easter menu.  They are a little expensive so saving them for a special occasion is perfect.  The last few years Easter has been pretty stressful in our house.  If you follow my blog, you know my husband had a heart attack 2 years ago right around Easter.  He actually came home from the hospital the day before Easter.  Luckily the Easter bunny hid eggs in our bedroom for our little one to find.  That way Daddy was able to watch her on her scavenger hunt.

A few weeks before last Easter, my husband had a mitro-valve repair. The first half of last year was pretty stressful but at least we managed to have a fairly decent Easter. My daughter wanted to know why the Easter bunny did not leave eggs in our room that year. She is already asking when we can decorate eggs this year. I see some deviled eggs in our future. It is about the only way I like hard boiled eggs. I’ve been meaning to work on lightening them forever so that will be my chance. I am so happy we have another year of the Easter bunny visiting. I hope it will last for 1 to 2 more years.

Of course, after our daughter finds all the eggs, she wants to hide them and have us find them again and again and again. She would make an excellent Easter bunny. I think the Easter bunny should write a list of where he leaves the eggs. There are occasions when we cannot find one and don’t remember where the Easter bunny told us they were. A list would be most beneficial. I don’t want to find a hard-boiled egg a few months from now. Yuck! It’s good to remember the good times. They help to keep the bad times in perspective and keep me hopeful for another year. Here’s to many more healthy, happy Easters.

Grilled Artichokes

Ingredients

  • 4 artichokes
  • 2 lemons, juiced, divided
  • 1 1/2 tbsp. Butter flavored Olive oil
  • 1 garlic clove, minced
  • 1 tsp. kosher salt
  • ¼ tsp. fresh ground black pepper

Instructions

  1. Fill a large bowl with water and juice of 1 lemon.
  2. Work with one artichoke at a time. Cut off the top third of each artichoke. Take off the bottom three layers of leaves. Using a vegetable peeler, peel off the outer layer of the stem. Cut off the spiky parts of the remaining leaves.
  3. Cut artichokes in quarters and remove the choke with a spoon (the hairy part) and any spiky small leaves
  4. Immediately place in bowl of lemon water.
  5. Drain all water except for about ¼ cup from the bowl.
  6. Cover with microwave safe plastic wrap and microwave the artichokes on high for 8 minutes.
  7. Carefully remove from microwave. Let cool for 1 minute then take plastic wrap off.
  8. Heat grill to 350°.
  9. In a small bowl, mix together oil, garlic, salt, pepper and juice of 1 lemon.
  10. Brush onto the inside of the artichokes.
  11. Grill artichokes cut side down for 4 minutes.
  12. Turn over and grill for another 4 minutes.

  2. Christie, these lovely artichokes bring back memories for me too :) I remember the first time I tried one and being totally confused how to eat them. Luckily there was enough butter to dip it in to make up for that. These look so amazing!

      Hi Nicole, The smoky flavor from the grill really added incredible flavor. It is a nice change up.
