There is nothing better in the summer than fresh corn on the cob. I love that sweet crunch that you can dig your teeth into. When you put the corn on the grill, you add a nice smoky flavor to it. Grilled Curry Lime Corn is the perfect vegetable to serve for Father’s Day.
For as long as I can remember I have loved corn on the cob. It is hard not to when you had Jersey corn to eat as a kid. There is a reason New Jersey is called the Garden State. I happened to have been born there and it was a place we always went back to while I was growing up. My grandparents lived there at the time. I fondly remember stopping at a road side farm stand and picking up corn and the most delicious tomatoes ever. It was such a fun treat. We would shuck the corn on the deck and throw it in some boiling water. Then I would slather on the butter and sprinkle with a little salt. Oh my, oh my, it is hard to get much better than that.
These days, I know the corn and tomatoes are never going to be as good as I remember. You have to work a little bit harder to make them taste as divine. Throwing the corn on the grill is the perfect way to do that. The curry powder and lime came from my hubby’s childhood. Corn on the cob was something he would eat growing up in India. They didn’t put butter on it but curry powder and lime. I love that this dish symbolize both of our childhoods even though we grew up half a world apart. Maybe it was fate already stepping in. It definitely makes corn on the cob feel more special for Father’s Day.
