At the first hint of nice weather, we go on a grilling spree. We keep trying to add to the food that we can grill and this time we played with cheese, specifically brie. Grilling the brie adds some grilling flavor to the brie and makes it oeey and gooey. The perfect consistence to serve on Breton Gluten Free crackers. We enjoyed it on both the Original with Flax and the gluten free Herb & Garlic Crackers. If I hadn’t known these crackers were gluten free, I would never have known by the taste. They were light and crunchy. Just what I like in a cracker. Serving the crackers with a gluten free appetizer like this one worked perfectly. With so many people needing gluten-free food, it is good to have a few recipes up your sleeve.

I’ve been wanting to do a brie recipe for a while but let’s face it. Cheese is fattening. It is also one of my all-time favorite foods. So I wanted a recipe that you could eat in moderation with a little something to cut all that fat but still give you the satisfaction of eating cheese. A little grilled vegetables did the trick nicely. Something else my grillmaster husband can grill. Why not keep all the preparation mess outside and my kitchen clean? Serving the soft cheese on a crispy, gluten-free cracker satisfied my love of crunch and ooey, gooey soft cheese.

A cheese plate has to be at the top of the list of a special treats. We rarely have a family get together without one. It may be surrounded by a crudite platter but there is cheese. When we are at a restaurant that has a cheese plate, my husband is over-joyed. That is his dessert. He does have to share a nibble or two with me though. I’m so happy to see a cheese plate making a come back in restaurants. It may seem a little old-fashioned but all the new cheese mongers make it so fresh and timely. With so many people with Celiac’s disease, it is a glorious dessert option. Pair it with Breton Gluten Free Crackers instead of bread and you are good to go.

Grilled Brie with Grilled Vegetable Relish

Ingredients

  • 1 tbsp. oil
  • 1/2 medium zucchini sliced in half horizontally
  • 1/2 medium yellow squash, sliced in half horizontally
  • 1/2 small sweet onion, sliced in half through the core
  • 1/2 poblano pepper, seeds removed
  • 1/2 cubana pepper, seeds removed
  • 1/2 tsp. kosher salt
  • 1/8 tsp. fresh ground black pepper
  • 1 (8 ounce) wheel of brie
  • 1 box Breton Gluten Free Crackers, Original with Flax or Herb & Garlic

Instructions

  1. Heat grill to 375 .
  2. Brush both sides of vegetables with oil and sprinkle with salt and pepper.
  3. Grill on each side for 3 to 5 minutes.
  4. Cut all vegetables into very thin slices and stir together in a small bowl.
  5. Place cheese directly onto the grill. Grill for about 5 to 10 minutes per side.
  6. Place cheese onto serving platter and cover with vegetables.
  7. Serve with Breton Gluten Free Crackers

    My husband loves cheese. Me not so much. The only way I can eat it is in a casserole where it is melted. I do like nachos and cheese. Ha!! HAPPY MOTHER'S DAY!!!

        I can't bite into any cheese that is hard or soft unless it is melted. The texture is awful to me. I don't even want it melted unless it is in a casserole or something to help change the test. I know, most people love it any kind of way.

          Hi Charlotte, The brie in this one definitely has more of a melted texture. We are going to try smoking cheese soon. I wonder if that would change the taste enough for you. Have you tried a smoked gouda?
  2. OMG goodness - this looks amazing! I always see baked brie recipes with fruit/jam (which are of course excellent) but why not veggies?? Can't wait to try this and have a feeling I'll be making this for many summer BBQs.

      Thanks Deanna. We've made this a couple of times before and I love the flavor the grill and the veggies bring. It is perfect with summer vegetables.

      I love brie but have always had it with fruit, pears, apples, grapes. Never have tried it with veggies. This looks so good. Have always baked brie or seen recipes with it wrapped in pastry. Thanks for the good looking recipe
