A day of Firsts – Greek Phyllo Salmon Packets and the First Day of Kindergarten

Welcome to Food Done Light and my inaugural recipe!  I picked today to start my new adventure as it also coincides with my daughter’s first day of kindergarten.  I figure if she can get on the “big girl” bus and go to kindergarten, I can start my new “job”!  I’ve been planning and preparing all summer; writing recipes, testing recipes, learning to stage the food and taking photos.  Luckily for me this has been a family project and my husband has been graciously taking and editing pictures.  My husband and daughter have also been great food critics.  My little one is already a foodie and loves to give her opinion.

Today’s recipe is in honor of my daughter, Lyla.  She loves salmon and has from around  the age of 2, when she would gobble down smoked salmon.  It always amazed me that she would eat smoked salmon at such an early age as I didn’t even begin to like it until my twenties.

This recipe actually came about because of my craving for moussaka and a pot pie.  I was doing some research on Greek food and the flavors and ingredients that are common there; but I also had a pot pie craving.  Somehow that morphed into this dish.  It takes care of my craving for Greek flavors and the phyllo takes care of the “crust craving” in a healthy way.  In addition to this loveliness, you get a hint of sweetness from the grapes, brininess from the olives, salty cheesy goodness from the feta and; of course, a great crunch from the phyllo dough.  Yummy!  I pair it with a little homemade tzatziki sauce (a traditional Greek cucumber and yogurt sauce).

Ingredients

  • 6 sheets of phyllo dough, defrosted
  • Butter Flavored cooking spray
  • 4 (4 ounce) salmon fillets, skin removed
  • 1 tsp. kosher salt, divided
  • 1/4 tsp. fresh ground black pepper
  • 1/3 cup reduced fat feta cheese
  • 1/4 cup chopped basil, packed
  • 1/2 tbsp. fresh thyme
  • 2 garlic cloves, chopped
  • 2 tbsp. chopped green onion
  • 10 green olives, halved
  • 12 seedless grapes, halved
  • Zest of one lemon
  • Tzatziki Sauce
  • 1/4 cup non fat Greek Yogurt (I used Fage)
  • 1/3 cup grated English cucumber, peeled or unpeeled - your preference
  • 1 tbsp. tarragon vinegar or white wine vinegar
  • 1 tbsp. grated onion
  • 1 small garlic clove, minced
  • 1/4 tsp. kosher salt

Instructions

  1. Preheat the oven to 400°.
  2. Place a wire rack on top of a baking sheet and coat with cooking spray.
  3. In a small food processor, pulse together feta cheese, basil, thyme, garlic, green onion, olives grapes, lemon zest and 1/2 tsp. salt. It should look like a paste. Pour the mixture into a strainer over a bowl and gently push out some of the liquid.
  4. Place salmon on a cutting board and gently blot both sides dry with a paper towel. Sprinkle remaining 1/2 tsp. of kosher salt and 1/4 tsp. black pepper over both sides of the salmon.
  5. Carefully unroll the phyllo dough and place a damp paper towel on top to cover the phyllo completely. Phyllo dough can dry out very quickly so try to work quickly and always keep the extra sheets covered.
  6. Uncover phyllo and place 1 sheet with the long side horizontally on a work surface. Cover remaining phyllo dough with the paper towel then lightly spray the single sheet with cooking spray. Do not worry if it rips the next layer of phyllo and cooking spray will act like glue. Place another piece of phyllo directly on top of the first sheet and again spray lightly with cooking spray. Repeat with one more sheet of phyllo for a total of 3 sheets.
  7. Using a pizza cutter or sharp knife cut the phyllo dough in half so you have 2 pieces 6.5 x 9 inches. Set aside and repeat step 6 with another 3 sheets of phyllo and cut in half so you now have 4 stacks in total.
  8. Place 1/4 of the feta mixture in the middle of each stack and gently spread out to about the shape of the salmon. Place the salmon on top. (See picture below)
  9. Fold up the short sides of the phyllo then the other two sides. (See pictures below)
  10. Place salmon packets on top of the wire rack, seam side down, and coat the packets lightly with cooking spray. (See pictures below) If your packet tears while moving it to the wire rack just cover the tear with a small piece of phyllo dough and spray with cooking spray.
  11. Bake for 7 – 9 minutes. You want the crust lightly brown and the salmon flaky.
