It is time for Surprise Recipe Swap again.  Surprise Recipe Swap is where I get assigned another food blogger and get to make one of their recipes.  This month I was assigned Attainable Cuisine by Stephanie.  Stephanie is a mother of 3 and working her way through college to be a teacher.  Wow that is a lot of work!  Stephanie loves cookbooks and food magazines and likes to try out the recipes she finds,  a girl after my own heart.

I enjoyed reading your blog and looking at her recipes.  Whenever I am going to pick a recipe for the Surprise Recipe Swap, I like to narrow down my choices to three recipes than pick one.  Otherwise, I find so many recipes I want to make it gets quite overwhelming.  This month my top picks were Chicken Tamale Bake.  I love the tamale casseroles that I have had in the past and really loved her topping.  My second finalist was Mexican Quinoa Patties.  Now that I have finally managed to make quinoa without over cooking it, I love to find new ways to use it.  In the end I chose Greek  CheeseLayered Spread.    I adore Greek cheese and loved how pretty the layered dip was.  In fact I knew this Greek Cheese Layered Spread would be a fantastic recipe to take to BBQ’s and potlucks in the summer.  In addition I changed it just a little to lower the fat and calories and use some ingredients I had in my refrigerator.

Greek Layered Cheese Spread

Ingredients

  • 12 oz third less fat cream cheese. softened
  • 6 oz fat-free feta cheese crumbles
  • 10 oz frozen chopped spinach defrosted and thoroughly squeezed dry
  • 1 tsp Italian seasoning or pizza seasoning
  • 2 Tbsp Bruschetta
  • 1 oz Sun dried tomatoes with Greek Oregano not in oil
  • 1 cup chopped roasted red peppers

Instructions

  1. In a large bowl, mix together softened cream cheese, feta, spinach and seasoning.
  2. Next in a small bowl, mix together brushcetta, sun-dried tomatoes and roasted red peppers.

  3. In a medium bowl, lay plastic wrap into the bowl. Be sure to press the plastic wrap all the way down the bottom. I turned the bowel 90º and put another layer of plastic wrap on top. Again be sure to press all the way down to the bottom of the bowl.
  4. Place 1/3 of the cheese mixture into the bottom of the bowl and smooth out with a spatula or your hands. I found using my hands easier.
  5. Layer on top with 1/2 of the red pepper mixture. Even out with your hands or a spatula.
  6. Place another 1/3 of cheese mixture on top and even out.
  7. Layer last half of red peppers than last 1/3 of cheese mixture.
  8. Cover with plastic wrap.
  9. Refrigerate for at least 2 hours or overnight.
  10. When ready to serve, unwrap the top of the plastic wrap. Place a plate on top of the bowl and turn over. Pull the plastic wrap gently if the cheese spread does not automatically fall onto the plate. Unwrap the rest of the plastic wrap and serve with french bread.

    What is Bella Sun Luci Bruschetta? Where did find it?

      My grocery store has it. Look for it with either the tomato sauce (pasta aisle) or condiment aisle. It may also be with the sun-dried tomatoes.
