It is my first apple recipe of the season, and it is a fun one Granola Apple Nuggets. I like to affectionately think of it as a healthier version of candy apple. It is immensely easy to make. Cut up some apples, dip them in yogurt and then crust with granola. If you are feeling fancy, melt some caramel and swirl it on. My daughter actually preferred these without the caramel! What?! She loved the less sweet and healthier version. I won’t be telling her that. I loved it with the caramel. Basically for an afternoon snack, I would skip the caramel, but for a fun Halloween treat, I would swirl on that luscious caramel. It is like getting two recipes in one.

You can also get your frustrations out by using a kitchen mallet and breaking up the granola, or let your KitchenAid food processor do the work. It only takes a few pulses to get the consistency right. It took me about 5 minutes to put these Granola Apple Nuggets together. They are also so easy that a child could make it. I even saved cleaning a bowl and dipped the apples right into yogurt carton. There is no need to spoon it into a bowl that you then have to clean. The point is easy clean up and easy to make.

I bought a few different types of apples to decide which was my favorite. Golden Delicious or Gala worked very well in this recipe. Now I have some extra apples sitting on my counter staring at me. They are daring me to make something else with them. I am so happy to see apples back in season. Granola Crusted Apple Nuggets with Caramel

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 2 medium golden delicious apple cored
  • 1 cup granola
  • 1 5.3 oz non-fat Greek yogurt
  • 8 caramel candies optional*
  • 1 tsp. water

Instructions

  1. Cut each apple into 16 fairly even chunks.
  2. Place granola into a food processor and pulse until slightly ground or place in a plastic bag and crush with a kitchen mallet.
  3. Pour the granola onto a plate.
  4. Push a toothpick through the skin side of I each apple nugget.
  5. Dip into the yogurt and with a knife, smear the yogurt over the apple nugget.*
  6. Press the apple nugget into the granola, being sure to cover all sides.*
  7. Refrigerate for 1 hour.
  8. If using caramel, place the candies into a small microwave safe bowl with water.
  9. Microwave on high in 20 second increments until the caramel fully melts when stirred.
  10. Using a spoon, drizzle the caramel over the apple pieces and refrigerate for 30 minutes.
  11. Serve cold.

Recipe Notes

*You can leave the skin side of the apple bear or cover it with yogurt and granola.
