Yes, I am still on all things Tropical, Caribbean or Mexican.  This time with a light and refreshing Fruited Black Bean Salad.  I always love the idea of having refried beans with a Mexican dish but they are so fattening.  Since there is so much wonderful fruit available right now, I decided to embrace it.  This dish is so light and refreshing.  It won’t weigh you down or stay on your thighs.  It is also delicious!

Fruited Black Bean Salad would be a fantastic dish to bring to a potluck.  There isn’t any mayo so you don’t have to worry about it spoiling.  It is also really easy and quick to make.  Now that is a plus.  Black beans also happen to be cheap.  You can open a can or cook them from dried beans.  My daughter loved it as soon as she saw the strawberries.  They are her favorite fruit.  She will eat almost anything that has strawberries in it.

This dish paired quite nicely with my Crab Mango Enchiladas.  I would also serve it with a burger or any BBQ dish.  I had some of the leftover fruited Black Bean Salad with scrambled eggs the next day too.  I wish I had wrapped it in a tortilla for a breakfast burrito.  Yum, Yum.  It would be fantastic mixed with some Mexican rice and stuffed in a burrito for lunch.  How about in a crepe?  Oh, this dish has endless possibilities.  Makes me giddy thinking about it all.  Try it for yourself and let me know how you use it.

  • 1 (15oz) can black beans, rinsed
  • 1/2 cup chopped mango
  • 1/3 cup chopped sweet onion
  • 1/2 cup chopped strawberries
  • 2 tbsp. chopped cilantro
  • 2 tbsp. salsa verde (I used Salsa Herdez)
  • 1/4 tsp. ground cumin
  • 3/4 tsp. kosher salt


  1. Mix all the ingredients together in a medium bowl.
  2. Cover and refrigerate for at least 30 minutes.
