Eggplant Fries with Boursin Ranch Dressing

Eggplant Fries with Boursin Ranch Dressing will have your family happy to eat their vegetables. Panko crusted eggplant planks won’t have you missing french fries at all.

Even my kids loved them - Eggplant Fries with Boursin Ranch Dressing Low Calorie, Low Fat, Healthy Side DishWe love french fries.  I know who doesn’t!  They are one of life’s little pleasures but they are also loaded in fat, calories and sodium.  So I like to find different ways to satisfy our french fry cravings.  That is where Eggplant Fries come in.  With a little help from panko bread crumbs, they have a delicious crunch.  They are also one of the few ways I can get my daughter to eat eggplant

These little sticks of  crunchy dynamite are a great little treat for dinner.  Your kids will love the crunch too and of course, who can resist dip.  This ranch dressing dip is charged up by the addition of light Boursin cheese.  You can use any light version of a herb and garlic cheese spread.  We happened to have a huge amount of it.  My father in law lives in Singapore and when he was visiting he stocked up on cheese to bring back.  Apparently it is really hard to find cheese in Singapore and it is very expensive.  Oh, I cannot even imagine!  Cheese is huge in our house.  Apparently a lot of Chinese are lactose intolerant so cheese is not something they eat.  Anyway, he had bought quite a few different cheeses and forgot them!  So sad for him.

I felt so bad for him but I had to come up with some recipes to use all the cheese.  My daughter called dibs on the Brie.  She is a Brie-aholoic.  The light Boursin was a surprise ingredient for me.  I didn’t even realize they made a light version and it is delicious.  I had to channel my inner Iron Chef and think of different ways to use it other than just eating it.  We try not to eat a ton of cheese even though we love it.  Cheese is so sadly filed with saturated fat and not exactly healthy for my hubby to eat.  We try to keep it to special occasions.  So using a little in different recipes was a great way to use it up without loading food with too much fat.

So skip the regular fries and make some eggplant fries.  They are fun to dip and crunchy to eat, totally kid friendly.  The adults in the family will love them too.

Eggplant Fries with Boursin Ranch Dressing

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

  • 1 eggplant
  • ½ cup seasoned panko
  • 1/2 tsp salt
  • ½ tsp pepper
  • 1 egg white lightly beaten

Boursin Ranch Dressing:

  • ¼ cup buttermilk
  • ¼ cup light Boursin or any garlic herb cheese spread
  • 2 tbsp Greek yogurt
  • 1 green onion
  • 2 tbsp chopped cilantro
  • Salt


  1. Preheat oven to 450. Place a wire rack on top of a large baking sheet.
  2. Cut both ends off the eggplant. Cut eggplant in half. Stand the eggplant on the larger end and carefully cut off the skin. Repeat with the other half.
  3. Cut the eggplant into 1/4 inch planks.
  4. In a flat plate, mix together panko, salt and pepper.
  5. In dish, lightly beat the egg.
  6. Lightly dip the eggplant into the egg allowing any excess to drip off.
  7. Cover all sides of eggplant with panko and place onto the baking sheet. Repeat with all of the eggplant.
  8. Bake for 10 to 15 minutes or until eggplant is done and panko is crispy.
  9. In a small bowl, whisk together dressing ingredients and serve with eggplant fries.

  2. Totally a nerd comment, but by nature humans should be lactose intolerant. Vikings developed a tolerance (by what I'm calling the world's greatest genetic mutation ever) and spread it around to the countries they traveled to. Never made it to Asia, so lactose intolerance is much more common there. Thankfully, I'm in some way descended from a viking so I can enjoy that dipping sauce -- it sounds crazy good! And I'm always a fan of eggplant.

  7. This sounds promising! I've never worked with eggplant. Is it easy to peel? Or, if not peel (you said "cut"), is there a certain type of knife or technique I should be aware of? The person I would be making these for is an unbelievably picky eater with a lot of dietary health issues on top of it. He won't eat any kind of sauce. I'm hoping these are good enough without the sauce to please him! Thanks much. :-)
