Easy Slow Cooker Corned Beef and Cabbage for St. Patrick's Day

Thank to this Easy Slow Cooker Corned Beef and Cabbage recipe, I can quench my craving for corned beef any time I want. When we lived in Florida it was so easy to get a divine corned beef on rye sandwich. Alas, here in the middle of nowhere Georgia, there is not a good Jewish deli for miles. For this reason, I have resorted to making my own corned beef. Actually I should look at this as a winning solution.

Healthy way to cook corned beef right in the crockpot

First we can enjoy an easy slow cooker corned beef and cabbage dinner. Then with the leftovers, I can enjoy my corned beef on rye sandwich with coleslaw, of course. In addition to the sandwich, I plan on getting a little fancy with either  leftover corned beef chowder or corned beef empanadas. Possibly even corned beef dip or corned beef tortilla roll ups. Oh the possibilities are endless. The truly best part is that the leftover corned beef solves my lunch issue. It is easy and tremendously satisfying to have a corned beef sandwich for lunch.

I much prefer to make my own lunch meat, like Buffalo Turkey Breast Meat, rather than by processed deli meat loaded with sodium. In this particular corned beef recipe, I even changed up the flavor by adding pastrami spices to the slow cooker and some hard apple cider. You can be quite creative with your liquid and spices. Slow Cooker Corned Beef & Cabbage

  • 1 lbs corned beef brisket about 3 ., spice mix not needed
  • 12 oz hard apple cider
  • 2 tbsp black peppercorns
  • 2 tbsp juniper berries
  • 2 tbsp coriander seeds
  • 1 tbsp mustard seeds
  • 1 inch ginger peeled
  • 3 cloves garlic minced
  • 2 large onions quartered
  • 8 medium red potatoes
  • 2 cups sliced carrots
  • 1 medium cabbage cored, cut into 8 wedges


  1. Place corned beef into a slow cooker.
  2. Pour over apple cider and enough water to cover.
  3. Place next 5 ingredients into a piece of cheesecloth tied with string.
  4. Place into slow cooker.
  5. Add remaining ingredients to slow cooker.
  6. Cook on low for 8 hrs.
  7. Remove cheesecloth before serving.

I calculated  10 Weight Watcher Smartpoints for 3 oz corned beef, 1/2 potato, 3/4 wedge of cabbage and 1/4 cup carrots.

  1. I've never made corned beef, but now that I know it can be made in the slow cooker, it might have to happen! Where do you usually get juniper berries? I've never seen those in the spice section.
