Crunchy Sweet & White Potato Pancakes topped with Greek yogurt and Smoked Salmon will make an party special. These elegant appetizers will be a crowd favorite.
Sweet potatoes and white potatoes mix with eggs and whole wheat flour to make the perfect duo of potato pancakes topped with Greek Yogurt and Smoked Salmon. This is a fairly healthy appetizer. I cook them on a griddle with just a little butter.
This was one of the appetizers I recently served at our Christmas Party. I love to make potato pancakes because they are so versatile. You can put all different types of toppings on them and they look so elegant. I have seen so many different types of pancakes with zucchini, carrots or lots of other veggies. I decided I wanted to make a “duo” and since I had already been playing with a sweet potato pancake I chose sweet and white potatoes. For our party, I topped them with light sour cream and smoked trout. They are equally as good with non-fat Greek Yogurt and Smoked Salmon or Prosciutto or go for the gusto and top them with caviar. You can get a small decently priced caviar at your local grocery store.
I have to tell you I cheated a little bit. I took a little help from the grocery store on this one. I had so much to make so I brought frozen southern hash browns. They are basically just shredded potatoes! For the sweet potatoes I popped them in my food processor to shredded them. Then I put all the potatoes in a clean dish towel and wrung out as much water as I could. It really wasn’t much. I also used King Arthur whole wheat white flour but you could use regular all-purpose, unbleached flour. I just try to substitute whole wheat where I can. You cannot tell the difference. Another helpful hint, after I made them and cooled them, I froze them. When I was ready to serve them I popped the pancakes on a baking sheet and put them in a 425° oven for about 15 minutes. So easy!
You do not have to relegate these little cakes to appetizers, they make a great side dish too. You can make them big or small and keep them in the freezer for a quick easy side. I love to slather gravy on them! Oh my gosh, is that good. They are fantastic with a roast. I also recently saw a recipe that used potato pancakes in place of an english muffin for Eggs Benedict. If I can ever perfect my lower calorie hollandaise sauce, I will make that recipe. I could go on forever talking about potato pancakes but I will give you the fabulous recipe instead so you can come up with your own variations. I would love to hear what you top them with.
