Cucumber Mojito - made with fresh cucumber and mint

Simply seeing these photos of my Cucumber Mojito is making me drool. These are cool and refreshing. While cocktails are not exactly healthy, I do make my cocktails with healthy ingredients. Therefore I try to use fresh fruits, vegetables and herbs. In this case I used fresh cucumber slices and mint leaves right from our garden. Additionally I replaced sugar with agave for the sweetness. In fact you will notice I did not use much agave either as I am not a fan of sweet cocktails.

One of my neighbors first turned me onto making my own mojitos. Notably, a mojito is a Cuban cocktail made with rum and fresh mint. She would make us a blood orange mojitos when we were over for dinner. I was quite bummed when they moved to Arizona last year, however, I am extremely excited that we will be visiting them this weekend. She has already told me she will have a batch of mojitos waiting. What a friend!

Refreshing alcoholic beverage made with rum, cucumber and mint

For this particular mojito, I chose cucumber for my flavoring. Especially since cucumber is in season. In fact I find that cucumber makes cocktails particularly light and refreshing. Almost providing a calming effect, perhaps because I associate cucumber water with a spa experience. As with all my cocktails, this one is easy. Simply muddle the cucumber and mint together. Add agave, rum and fresh lime juice. The lime juice absolutely must be fresh. Finish off the drink with soda water or seltzer water. Cheers to a great cocktail.

Cucumber Mojitos

  • ¼ cup chopped cucumber
  • 1 tsp agave
  • 6 mint leaves
  • 1 ½ oz rum
  • 1 oz fresh lime juice
  • 3 oz Soda water


  1. Place cucumber, agave and mint leaves in a cocktail shaker.
  2. Using a muddler or spoon, crush cucumber and mint.
  3. Fill with ice.
  4. Add rum and lime juice.
  5. Shake vigorously.
  6. Pour into a glass and top with soda water.
