Cucumber Bites with Salmon Mousse

Ingredients

  • 2 oz. Greek yogurt cream cheese softened
  • 1 5 oz. can skinless, boneless pink salmon
  • 2 tbsp. reduced fat sour cream
  • 1 tbsp. chopped fresh dill plus more for garnish
  • 1 tbsp. capers drained
  • 1/2 tsp. kosher salt
  • 1/8 tsp. fresh ground black pepper
  • 1 English cucumber cut into 26 slices about 1/4 inch thick

Instructions

  1. In a food processor, combine cream cheese, salmon, sour cream, dill, capers, salt and pepper.
  2. Top each cucumber round with salmon mixture.
  3. Refrigerate until ready to serve.
