Cucumber Bites with Salmon Mousse
- 2 oz. Greek yogurt cream cheese softened
- 1 5 oz. can skinless, boneless pink salmon
- 2 tbsp. reduced fat sour cream
- 1 tbsp. chopped fresh dill plus more for garnish
- 1 tbsp. capers drained
- 1/2 tsp. kosher salt
- 1/8 tsp. fresh ground black pepper
- 1 English cucumber cut into 26 slices about 1/4 inch thick
In a food processor, combine cream cheese, salmon, sour cream, dill, capers, salt and pepper.
Top each cucumber round with salmon mixture.
Refrigerate until ready to serve.
