Creamed Spinach

A healthy version of a classic. I swapped out the heavy cream for So Delicious Coconut Milk Creamer

Creamed Spinach – YUMMY! Yes, spinach is yummy especially when it has smoked Gouda and cream. What wouldn’t be good with cheese and cream. The trick is making it low-calorie and still taste scrumptious. Creamed spinach has that richness to it. It feels luxurious on your tongue. It makes you forget that you are eating spinach. So I set about finding something I could use instead of cream.

Off to the grocery store I went. I love to stroll down the aisles looking for new food to try, maybe a new vegetable, a new spice or new vinegar. That is when I came across So Delicious Coconut Milk Creamer. The nutritional value said it had 10 calories per tablespoon and no fat. That was a promising start, so I bought it. I sent an email to So Delicious to find out how many calories and fat 1 cup had. I kept my fingers crossed that they would reply and they did! The customer service I got from them was fantastic! No, I’m not a paid spokeswoman. I wish! They specialize in dairy free products but I like it because even a cup is low in fat. It would be a great substitute depending on how well it heated.

I started conjuring up my inner Chris Kimball on America’s Test Kitchen and decided to put the coconut creamer through its paces and see what it could do. I had little hope it would whip, it is too low in fat. I was right, it was a no go. Such a bummer! Next I tried to bake Brussels sprouts gratin in the oven and I curdled it. I did notice though that it did not curdle right away. So I realized I could simmer something in it just not let it boil for a long period of time. Woo hoo! It was time to break out the creamed spinach, such an exciting moment – let me tell you! It worked, it worked! The creamer did not curdle and added a nice luxurious taste and flavor to the spinach and even a hint of sweetness. It was perfect. I could have licked the bowl when we were done. Creamed Spinach would be a great addition to our Thanksgiving table. Have you tried any new healthy products lately?

Luxurious and rich

Creamed Spinach (Serves 8)

20 ounces frozen chopped spinach, defrosted
1/2 cup minced onion
1 garlic clove, minced
1 tbsp. whole wheat flour
1 tbsp. light butter
1 1/2 cup So Delicious Coconut Milk Creamer
1/4 cup (1 oz.) Grated Smoked Gouda
1/2 tsp. kosher salt
1/4 tsp. fresh ground black pepper
Pinch nutmeg

  1. Place spinach in a clean dish towel and squeeze out as much water as you can.
  2. In a large non-stick skillet over medium heat, melt butter.  Add onion and garlic and cook until the onions are tender, about 5 minutes.
  3. Add spinach and cook for another 2 minutes or until spinach is hot.
  4. Stir in flour and continue to cook and stir for 1 minute.
  5. Add coconut milk creamer and bring to a simmer.  DO NOT BOIL!
  6. Stir continuously until mixture thickens, about 2 minutes.
  7. Stir in gouda, salt, pepper and nutmeg and cook and stir until cheese is melted.

Calories 76    Fat 4 grams    Carbs 9 grams   Fiber 2 grams  Protein 4 grams

      Thanks Sarah - creamed spinach doesn't normally have gouda in it. My daughter loves gouda so I put it in to entice her to eat it.

  12. I'm confused ... based on the nutritional value stated, this is extremely high in fat, & based on your narrative, I was not expecting that. Haven't taken time to figure it myself .. is this correct?

      Hi Sherry, Thank you, thank you, thank you for pointing this out to me. I transposed the carbohydrate and fat numbers when I wrote the recipe. That is a bad mistake! It won't happen again.
