It is baking season! Are you running yourself ragged trying to get Christmas cookies baked, finishing your Christmas shopping, decorating and trying to be merry? It can really weigh you down. Having some easy and quick recipes like Cranberry Pistachio Bread up your sleeve, can make life much easier. The thing I look forward to the least, writing and addressing Christmas cards. I absolutely hate doing it. I don’t know why since I absolutely adore getting them. I love seeing the pictures and reading the letters from friends far away, but just the thought of writing and addressing them sends me into a conniption. I know it sounds stupid but it never goes smoothly.

The addresses never seem to line up correctly with the address labels. I inevitably put in the labels upside down and print the addresses on the wrong side. If I get the labels the correct side up, then they jam in the printer. Ugh! I just can’t take it. I always seem to be a few stamps short too. Then I forget to buy more. Licking the envelopes! Seriously – yuck! I dampen a paper towel and use that to moisten the envelopes. It works  great for some and others, those silly envelopes just won’t seal.

I think I will sit with a mug of coffee, a Christmas mug of course, a slice of Cranberry Pistachio Bread, blast Christmas music and sit down and stuff all those envelopes with Christmas cards. Maybe that will make the job go easier. With that monkey off my back, I can merrily go on my way with the rest of my Christmas duties. I still have Christmas shopping to do. Holy cow! How did that happen? I have usually finished months ago. I have been dawdling a little too much. I still have to make Christmas cookies, oh, and wrapping!  Time to get to it.

Cranberry Pistachio Bread {Low Fat, Vegetarian}

Ingredients

  • 1 1/3 cups (160 grams) all-purpose, unbleached flour
  • 1 cup (120 grams) whole wheat pastry flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. kosher salt
  • 1/2 tsp. ground cinnamon
  • 2/3 cup granulated sugar
  • 1/3 cup orange juice
  • 1 cup plain 2% fat Greek yogurt
  • 2 eggs (You can use 1/2 cup egg substitute instead)
  • 1 tsp. vanilla extract
  • 1 cup fresh cranberries, or frozen that have been thawed
  • 1/2 cup chopped pistachios
  • 1 1/2 tbsp. orange zest

Instructions

  1. Preheat oven to 350°. Spray a 9 x 5 x 3 inch loaf pan with baking spray.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Place aside 1 tbsp.
  3. In a medium bowl, whisk together the sugar, orange juice, yogurt, eggs, and vanilla.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. In a small bowl, gently stir cranberries, pistachios and orange zest with 1 tbsp. of flour mixture.
  6. Fold into the batter.
  7. Pour into the loaf pan and bake for 1 hour to 1 hour 15 minutes.
  8. Let cool for 5 minutes.
  9. Carefully take bread out of pan and place on wire rack.
  10. Cool completely.

    When I first saw this I thought it was a yeast bread. I love orange and cranberry. 3 years ago I was so stressed from shopping and trying to buy things that teenage boys would want. So, I decided that was it because that is not what CHRISTmas is supposed to be about. I told them I was not doing gifts any more except on birthdays. I spend more on their special day and do things through out the year. I have enjoyed the last 3 years much more too.

      Hi Charlotte, Glad you found a way to enjoy this time of year more. Santa still comes to your house. I have a feeling it might be the last year for that particular tradition. Then I think it is time for my daughter to become "Santa".

  5. I hate doing Christmas cards too. We have had ours for over a week but I keep putting off addressing them and getting them in the mail. This bread looks great and would be perfect for the holidays or for gift giving!
  6. Christie this bread looks fabulous and so moist. Perfect for Christmas morning too! I can relate to the cards as well. As much as I love getting them, it's getting harder and harder to get them out in a timely manner myself. I usually take a nice photo of the girls to put on the card and this year, it just wasn't possible to get a nice one of the two of them together. Merry Christmas to you and your family!

  8. I love cranberries and pistachios so much! So this combination is outstanding! I have to try these and omit the greek yoghurt and use almond or coconut yoghurt and will omit the eggs for make it it vegan! :)

  10. The holidays can be so busy and you're right, it's great to have a few easy recipes to pull from. I just can't seem to get enough of cranberries during this time. I love this bread recipe, the cranberry and orange combination sounds lovely.
  11. Cranberry bread is one of my favorite breads to make at the holidays. I actually haven't made any yet this year but I need to change that! I love the pistachio in this one--I have to give that a try.
