Can you tell I cannot wait until Christmas? I am sharing a Christmas cookie already, before Halloween. What?? Who says cookies have to wait until Christmas? Why can’t I enjoy a cookie any time I want? I’ve used healthy ingredients in these Cranberry Coconut Macaroons and demolished most of the sugar, so I say eat your cookies. Sure these are perfect for Christmas with their red and white motif, but they are also a good little treat instead of all that sugar laden Halloween candy. I did dip them in a little white chocolate to make them extra special.
The keys to these coconut macaroons are unsweetened coconut flakes and SPLENDA® Naturals Stevia. Make sure you get unsweetened coconut. Check the bag twice to make sure. Believe me I’ve picked up one that was on the grocery shelf with all other unsweetened only to get home to find it was sweetened. Argh! Next I used Stevia and yes, it is a SPLENDA® Natural Stevia Sweetener. You read that right. SPLENDA® now has a natural stevia product, and I love it. It has zero calories just like their other sweeteners and has no bitter aftertaste thanks to Reb D stevia extract.
I love that there are no added flavors or colors, no preservatives and no GMO ingredients in SPLENDA® Naturals. Wow, they really mean “Natural”. Natural is one of my favorite words, but not for the reason you think. It has nothing to do with food. OK, pick your chin off the floor. I do like other things besides food. Pedicures, I adore pedicures. I want Santa to bring me a gift certificate to get a pedicure from my favorite place that has “Natural” as part of its name. I can feel my body relaxing just thinking of it. This is the best pedicure I have ever had. I actually fall asleep during it. That never happens.

Low Sugar Cranberry Coconut Macaroons Dipped in White Chocolate
- 5 large egg whites
- 12 packets SPLENDA® Naturals Stevia
- 1 tsp . vanilla extract
- Pinch of salt
- ½ cup dried low-sugar cranberries , finely chopped
- 3 cups unsweetened shredded coconut
- 2 oz . white chocolate
Preheat oven to 350•. Line 2 baking sheets with parchment paper.
Whisk together egg whites, SPLENDA®, vanilla and salt.
Add coconut and cranberries, stirring to fully incorporate.
Using a tablespoon scoop, pack cookie mixture into the scoop then place onto the baking sheet leaving an inch spacing.
Bake for 18 to 20 minutes, or until cookies are lightly brown.
Transfer to a wire rack and cool completely.
In a small bowl, microwave white chocolate in 30 second increments, until melted when stirred.
Dip bottom of cookies into melted wafers and place back on wire rack to dry.
