Mother’s Day is just around the corner, and my mind is going to some of my favorite special occasion foods. A crab, mango and avocado salad immediately came to my mind. We had this wonderful salad almost 10 years ago and have since added it to our Mother’s Day menu. When it comes to Mother’s Day, it is all about tea time and snacking. We use to make up a batch of little sandwiches and tea cakes, but we soon skipped making tea sandwiches. However, we all like something different on our sandwiches, so now we just make different toppings and have a “Be Your Own Chef” feast. We even like to put our toppings on different foods.
While at Walmart, I was looking for some different ideas to use as a base for our toppings and thought about RITZ® crackers. We always have them in the house, as they are my little one’s favorite crackers. I picked up the whole wheat variety for this recipe. In addition I also kept the crab simple. Don’t you hate when you get a crab cake or crab salad and it is all filling? Crab is expensive, so I want to enjoy every single bite of it. I don’t want a mouthful of filler. Specifically I want light and refreshing sweet crab meat on a crunchy cracker. In addition I decided to top the salad with a little piece of avocado for a buttery finish. Crab, Mango and Avocado are my favorite trio of flavors.
I have a little left in my refrigerator. I am going to have one fabulous snack this afternoon! Around 3pm, I always want a snack. My brain will go into overload thinking about a healthy and fun snack to eat. My taste buds are already drooling with the thought of a little crab mango salad on a RITZ®. Hurry up 3pm! I don’t know if I can wait that long to dig in.

Crab and Mango Salad with Avocado
- 2 tbsp. low-fat mayonnaise dressing
- 4 tsp. fresh lime juice
- 8 oz. lump crab meat
- 1/4 cup finely diced mango
- 2 tbsp. finely chopped chives
- Zest of one lime
- 1/4 avocado finely diced
- 24 RITZ® Whole Wheat crackers
In a medium bowl, whisk together mayonnaise and lime juice.
Gently stir in crab, mango, chives, and lime zest.
Top crackers with a little less than a tablespoon of crab salad.
Top with avocado and serve immediately
