Corn Salad with Tomatoes, Avocado and Cilantro Vinaigrette

 Fresh off the cob kernels of corn, ripe tomatoes and creamy avocado are tossed in a light cilantro flavored vinaigrette for a true taste of summer in this deliciously, healthy corn salad.

Now that my little one is back in school, it feels like summer is over. It is pretty silly considering I only need to go outside into the 90° weather with 90% humidity to know that summer is very much still with us.  While my brain is saying, it’s still summer for another month; my heart is saying it’s fall.  Luckily I have the inspiration of fresh corn on the cob and tomatoes to remind me summer vegetables are still very much in season.  Oh the sweet taste of summer!  As much as I love zucchini, red peppers and all the other summer fruit and vegetables, it is corn on the cob and tomatoes that I could not live without.  When I think of summer and vegetables, I think of Jersey corn and tomatoes.  There is nothing like it anywhere in the world.



This corn salad celebrates all my favorites and is quick and easy. It all depends on good ingredients so take the extra time to cut your corn off the cob and buy the best tomatoes you can. If you find some heirlooms or grow your own, that will be even better. If you are one of those unfortunate people that cilantro tastes like soup (yes, that is a real), then you can substitute parsley. Hum, if you hate cilantro then you probably aren’t looking at this recipe but just in case… We love it so I always substitute cilantro for parsley in any recipe. You can always substitute parsley for cilantro too.

Corn, Tomato and Avocado Salad with Cilantro Vinaigrette

  • 1 tbsp . olive oil
  • 1 tbsp . water
  • 2 tbsp . fat free Greek yogurt
  • ¼ cup chopped fresh cilantro
  • 2 tbsp . chopped fresh mint
  • 2 tbsp . white champagne vinegar
  • 1 tbsp . fresh lime juice
  • 2 tsp . light brown sugar
  • ½ tsp . kosher salt


  • 2 1/2 cups fresh corn kernels cut off about 5 cobs.
  • 1 1/2 cups chopped asparagus
  • 1 cup chopped tomatoes
  • ½ cup finely chopped red pepper
  • ½ cup chopped Avocado
  • ½ cup finely chopped sweet onion


  1. In a blender, puree all ingredients for the dressing.
  2. Pour into a large bowl.
  3. Add the salad ingredients.
  4. Toss well to fully coat all the ingredients and serve.

      Hi Mindy, I chose not to. If you don't like raw asparagus, go ahead and blanch it in some simmering water for about 2 minutes.
