I don’t know why but there are certain types of food that make me sing. Yes, sing. It is just one of those weird ways my brain works. Whenever I think of a dip, I automatically start singing “Dip Baby Dip”. You know the lyrics from the song Tootsee Roll. This happens every single time. It is the same way with doughnuts, but instead of a song it is the old Dunkin Donuts commercial that comes to my mind “It is time to make the donuts”. Maybe it is because my mind never ever seems to stop working. I mean seriously the minute I am half awake my brain is in full gear going over everything I have to do that day. I need a switch to try and turn it off. Do I really have to analyze every single thing? I have started to learn meditation in hopes to control the beast . I feel like a cowboy who needs to rope my brain and bring it to the ground to control it. Woo, it is exhausting.
Now that I’ve gotten that off my chest, can we get back to the dip already? I often find dessert dips way too sweet. Blaa – yuck! That is what I like about straight 100% pumpkin puree. It is a little tart so I can add the amount of sweetness I want. I am not about sickly sweet. I used a little frozen coconut whipped topping to add another layer of deliciousness. It can be a little hard to find, but it is so worth it. Serve it with some apples that are a little more on the tart side, and you will be rolling her eyes with sheer pleasure. I like to do a mixture of green and red apples. It looks pretty, but the red ones tend to be sweeter so you can satisfy someone with a bigger sweet tooth. Whip up this dip. Dip Baby Dip.
