Christmas cookie season is in full swing. I am always trying to balance between baking old family favorites, like Coconut Orange Snow Balls, and trying new Christmas cookie recipes. I decided to start with new recipes. I can save the tried and true for closer to Christmas. With the success of my Dairy Free Egg Nog Cookies made with coconut oil, I decided to give coconut oil a try in chocolate chip cookies, the soft kind. I am not a fan of crispy chocolate chip cookies. I want soft, chewy chocolate chip cookies. I was definitely rewarded with soft baked cookies and a delicious coconut flavor.
My daughter is now trying to decide which is her new favorite, Eggnog Cookies or Coconut Chocolate Chip Cookies. I loved them both, too. I wonder how Coconut Chocolate Chip Egg Nog Cookies would be? The best of both worlds, or too much? I may need to give it a try; it may be a true winner. Although I am not set on coconut oil’s new health claims, I do love what it does to my baked goods. I especially like that I do not have to wait for butter to soften. I always forget to take the butter out, and only remember when I am ready to bake. Ugh! It is a time sucker. With using coconut oil, I can simply bake the cookies whenever I have time.
