Christmas cookie season is in full swing. I am always trying to balance between baking old family favorites, like Coconut Orange Snow Balls, and trying new Christmas cookie recipes.  I decided to start with new recipes.  I can save the tried and true for closer to Christmas.  With the success of my Dairy Free Egg Nog Cookies made with coconut oil, I decided to give coconut oil a try in chocolate chip cookies, the soft kind.  I am not a fan of crispy chocolate chip cookies.  I want soft, chewy chocolate chip cookies.  I was definitely rewarded with soft baked cookies and a delicious coconut flavor.

My daughter is now trying to decide which is her new favorite, Eggnog Cookies or Coconut Chocolate Chip Cookies. I loved them both, too. I wonder how Coconut Chocolate Chip Egg Nog Cookies would be? The best of both worlds, or too much? I may need to give it a try; it may be a true winner. Although I am not set on coconut oil’s new health claims, I do love what it does to my baked goods. I especially like that I do not have to wait for butter to soften. I always forget to take the butter out, and only remember when I am ready to bake. Ugh! It is a time sucker. With using coconut oil, I can simply bake the cookies whenever I have time.

Coconut Oil Chocolate Chip Cookies

Ingredients

  • 1/2 cup coconut oil
  • 2/3 cup sugar
  • 1/2 tsp. vanilla extract
  • 2/3 cup reduced fat milk
  • 2 2/3 cups (300 g) all-purpose flour
  • 1/4 cup unsweetened coconut flakes, ground
  • 1/2 tsp. kosher salt
  • 1/2 tsp. baking soda
  • 1/2 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350•. Line a baking sheet with parchment paper.
  2. In the bowl of a stand mixer, beat the oil and sugar until light and fluffy.
  3. In a small bowl, stir together milk and extract. Set aside.
  4. In a medium bowl, whisk together flour, ground coconut, salt, and baking soda.
  5. Beat in one-third of the flour mixture, then half of the milk. Repeat ending with flour.
  6. Shape dough into balls and place onto baking sheet, 2 inches apart.
  7. Flatten slightly with the bottom of a glass.
  8. Bake for 10 to 12 minutes, or until lightly browned.
  9. Place baking sheet onto wire racks and cool for 5 minutes.
  10. Place cookies directly on the wire rack and cool completely.

  2. Cookies are my favourite dessert to make and I love using coconut oil in them! Actually, coconut oil in any dessert basically works and I notice a huge difference (once you try it, it is hard to go back to other ingredients.)

      I actually don't use coconut oil a lot, but I am really starting to love it in baked goods. I've been experimenting with it in cakes with great results, too.
