Once a month a few friends from my neighborhood and I get together for Ladies night. We started it a few years ago and thought we would play bunco. After a few months of drinking wine and talking, we realized we were never going to actually play bunco. So let’s drop the pretense and just get together. I look forward to these nights. It is a night to laugh, talk, drink some delicious cocktails and share scrumptious food. It is a serious stress reliever.

This month I was hosting and decided to make a couple of recipes I have been testing for the blog. Luckily my friends are good sports about being guinea pigs. I whipped up the Grilled Pineapple and Mango Salsa and decided to make some pita chips to go with it. Since the salsa is a little sweet, I decided to embrace the sweetness and go with cinnamon flavored pita chips. These are easy peasy. Calling it a recipe is a little of a stretch. I loved the way they came out and thought you would too.

We had a fabulous cocktail, if I do say so myself. I made a Grapefruit French 75. Yummo! It is fresh grapefruit juice, simple syrup, gin and champagne. It may just be my new favorite. The pineapple mango salsa with these scrumptious Cinnamon Baked Pita Chips were a nice partner to the cocktail. A good laugh and just being Christie, instead of wife, Mommy and blogger, is just what I needed to feel rejuvenated. Whip up a batch for yourself and enjoy it with some good friends. A good laugh and conversation, along with scrumptious, healthy food, is just what you need to feel rejuvenated.

Cinnamon Baked Pita Chips

Prep Time 5 minutes
Cook Time 10 minutes

Ingredients

  • 3 pieces pita bread about 8oz.
  • Non-stick cooking spray
  • 2 tsp ground cinnamon
  • 1/2 tsp kosher salt

Instructions

  1. Preheat oven to 375°.
  2. Cut each pita into 12 triangles.
  3. Place on a large baking sheet (or 2). Spray with non-stick cooking spray.
  4. Sprinkle cinnamon and salt over top.
  5. Bake for 5 minutes. Turn over the pita and spray with non-stick cooking spray.
  6. Bake for another 5 minutes.
  7. Let cool and serve.

      Hi Lynn, I didn't write it down! I always make cocktails up as I go. I also made a big batch so I think it was about 3/4 cup grapefruit juice, 3/4 cup good gin, 2 cups champagne and about 1/4 cup simple syrup!
